WARNING! This dessert is very rich! :) Also, it says to put whipped cream on top, but I don't like that too much. Instead, I slice strawberries and put them on top. Yummy!

Make your dessert first for this menu to allow these chocolate cups to set and chill: This recipe is a no bake pot de creme, no kidding.


2/3 cup whole milk
1 egg
2 tablespoons sugar
Pinch salt
1 cup semi-sweet chocolate chips
2 tablespoons hazelnut liqueur or dark rum
4 demitasse cups
1 cup whipping cream
2 tablespoons sugar
Mint sprigs, for garnish, optional

Heat milk in a small pan over moderate heat until it comes to a boil.
In blender or food processor combine egg, sugar, a pinch of salt, semisweet chips, and liqueur. Run processor or turn on blender to low setting. Pour in boiling milk in a slow stream. The hot milk will cook egg and melt chocolate. Process or blend 1 minute, until smooth.
Spoon chocolate into 4 demitasse cups and chill. After dinner, beat cream until soft peaks form. Add a little sugar and beat to combine. Top the chocolate cups with a dollop of cream and garnish each cup with mint sprigs.
Place cups on saucers and serve with demitasse spoons. If you use teacups, this recipe will yield 2 cups, rather than 4.

Ingredients

for the crust:
1 1/2 cups graham cracker crumbs (usually one packege from a box of graham crackers makes 1 1/2 cups crumbs)
1/3 cup butter or margarine, melted (meausre after its melted)
3 tablespoons sugar

for the cake part:
3 packages (8 oz each) Philadelphia Cream Cheese, softened (set it out on counter top about 1/2 hour before making the cheesecake)
3/4 cup sugar
1 teaspoon vanilla flavoring/extract
3 eggs

Directions:
-preheat oven to 350 degrees F.
-MIX crumbs, butter and 3 tablespoons sugar; press onto bottom of 13x9-inch baking pan.
-MIX cream cheese, 3/4 cup sugar and vanilla with electric mixer on medium soeed until wel blended (I usually have to stop and clean the mixers a few times while its mixing). Add eggs, one at a time, mix after each egg until well blended. Pour over the crust and smooth out.
-BAKE at 350 F for 30 minutes or untilthe center is almost set. Cool. Refrigerate 3 hours or overnight. Store leftovers in refigeerator.

makes aprox 2 dozen.

Marbled Cake Recipe

Ingredients
1 packet of cake mixture
1 tablespoon of dark cocoa powder
2 teaspoons of milk
Red food coloring
3 teaspoons of finely grated orange skin

* Preparation time: 20 minutes
* Baking time: 35 minutes

Preparation

1. Preheat the oven at a moderate temperature of 180 degrees C. Grease a crowned shaped 20 centimeter in diameter baking mold with melted butter or oil. Cover the base and the walls with wax paper. Prepare the cake by following the instructions indicated on the packet. Then distribute the cake dough into three bowls.

2. In one of the bowls add in the cocoa powder and the milk. Stir carefully until obtaining a homogenous mixture. In another bowl add in some red food coloring and mix well. In the other bowl add in the grated orange skin and stir well so as to mix all the ingredients.

3. With the help of a spoon put the mixture alternating the three mixtures into the mold. Mix the cake dough with a pick so as to create a marbled effect. Smoothen out the surface. Bake the cake for 35 minutes or until when poking a wooden pick into the center of the cake it comes out clean. Let it sit for 10 minutes once it is done baking. Then place it over a metal rack and allow it to cool. Sprinkle it with confectioner’s sugar or with a glazing of your choice and serve.

1/3 cup of Grand Marnier
1 and ? cps of liquid cream
250 grams of strawberries, laminated

* Preparation time: 30 minutes
* Baking time: 10 to 15 minutes

1. Preheat the oven at a moderate temperature of 180 degrees C. Grease a long 30 by 25 by 2 centimeter baking mold with melted butter or oil. Cover the base and the walls of the baking mold with wax paper.
2. Prepare the cake by following the instructions indicated on the package. For the liquid, use milk. Pour the mixture uniformly into the mold. Bake anywhere from 10 to 15 minutes or until when poking at the center of the cake with a wooden pick it comes out clean. Let it sit for 5 minutes at least once it is done. Then put it over a metal rack and allow it to cool.

Jaffa Cupcake Recipe

Ingredients
1 packet of chocolate cake mixture
2 tablespoons of grated orange skin

Covering
60 grams of butter
? cup of confectioner’s sugar
1 tablespoon of cocoa powder
2 or 3 teaspoons of freshly squeezed orange juice

* Preparation time: 20 minutes
* Baking time: 15 minutes

Preparation

1. Preheat the oven at a moderate temperature of 180 degrees C. Cover one or two cup cake baking molds with 16 cup cake paper capsules. Prepare the cake according to the instructions on the packet. Add in the grated orange skin and beat the mixture. With the help of a spoon put the mixture into the paper cups filling them up half ways.

2. Bake the cup cakes for 15 minutes or until when poking them with a wooden pick it comes out clean. You might want to bake them in two separate series. Let them sit for 5 minutes once done and then put them over a metal rack and allow them to cool.

3. To prepare the covering: beat the butter and the sugar in a bowl with an electric mixer until it acquires a light and creamy texture. Add in the cocoa and orange juice and continue beating it until all the ingredients are well mixed. Place the topping over the cup cakes. Decorate them with sugared orange preserves covered in chocolate.

1 box chocolate cake mix
1 can coke

mix together, bake 350 until done.. rich brownie type dessert..

Tapioca pudding is very good - and doesn't contain cinnamon. The recipe is on the box.

Or, take a yellow cake mix and a can of fruit (your choice - pears - peaches - fruit cocktail, etc.) Drain the juice out of the can and use it in place of some of the water called for to make the cake mix. Partially puree the fruit to the point where there are small chunks. When you have the cake mixed by the box directions, stir in half of the fruit and pour into a sprayed cake pan. Bake by the box directions. As soon as it's done, take the leftover fruit and put it in a skillet. Heat a little, add about 2 cups of powdered sugar - sifted and a little water - you want it kind of thin. Once the sugar is clear, poke holes in the cake with the point of a meat thermometer and then pour the sugar/fruit mixture over the hot cake. Let cool. It will make a very nice moist cake. You can serve it as-is or top each piece with a little Cool Whip or Whipped Cream - not necessary. Or you could have a scoop of ice cream on the side. Everyone loves this cake.

Alton Brown Milk cake. I haven't found someone yet that didn't like this one, It takes a good stand mixer and needs at least 9 hours before you serve it to sit in the fridge. Just make sure everone can drink milk
