Yes, just leave it out.

Vanilla extract is mostly alcohol but it has concentrated flavor from vanilla beans.

Almond extract, rum, amaretto, Grand Marnier, framboise, or any of dozens of other extracts, essences, brandies, or liqueurs could stand in for vanilla

Leave it out, you'll be fine

Whiskey makes a great substitute!

You could also try Chocolate Extract.

Yes, you can go without it.

You can go on without it but, if you have another kind of extract, orange or almond or rum, you could think about whether that flavor goes well with the other ingredients and substitute. The cookies will taste a little flat without something.

You have many options, I would almond flavour if I had it. it is soooo yummy. or as was suggested by others, take a boo in the booze cupboard, there are all sorts of things that you can use in there...be brave...dare to be different,

dont worry about it put some cocoa in em
