Eggplant pamersan, I don't have my mother's recipe. She never made hers with breadcrumbs. Fry eggplant with?!


Question: I remember her eggplants were fried in a pan first, and they were coated in something, but I don't remember what it was. All the recipes online call for breadcrumbs, but I don't think thats what it was. Any ideas?

I slice mine thin and dip in seasoned flour then in an egg/milk mix and back in flour and fry til crisp on both sides. then make the casserole. of course I have to eat a few with salt on em first!

no, it has to be bread crumbs-i was wrong!

But i did find a recipe using Parmesan instead of bread crumbs

I've always made mine by dipping the egglant in egg, then flour and egg again and finally frying in oil until golden. I've never used bread crumbs.

Easy one.
Cut in slices first, let water drain out on paper towels for 1/2 hour, (or it will all be mushy) spread with mayonnaise on both sides, dip in a mixture of cracker crumbs, onion powder, garlic powder, Parmesan cheese and dried parsley flakes. bake in oven at 350F for 1/2 hour, check and turn over if needed. Bake until tender, and the breading is golden. Timing will really depend on how thick you slice the eggplant.
