Cooking advice?!
however i have no time as i have a baby and would like to make easy quick but healthy dinners for hubby who does not eat vegetable unless its peas, sweetcorn or mushrooms, so this really restricts meal ideas
any ideas???

Crock pot is a good deal when you're low on time. You can prep the food ahead of time and put it on when you can. It makes the whole house smell wonderful all day long!
This is so easy, and you can't believe how tasty!
Swiss Steak
1 round steak
2 cans stewed tomatoes
Egg noodles, cooked.
Sear the steak on both sides.
Put in crock pot and sprinkle with a good seasoned salt.
Add the two cans of tomatoes.
Cook all day (8 hours or so).
Serve over cooked and buttered egg noodles.
Yummy!
CROCK POT ENCHILADAS
1 lb. hamburger
1 onion, chopped
1 sm. can chilies
1 sm. can mild enchilada sauce
1 can golden mushroom soup, undiluted
1 can cheddar cheese soup, undiluted
1 can cream of mushroom soup, undiluted
1 can cream of celery soup, undiluted
1 lg. pkg. Dorito chips
Brown hamburger and chopped onion, pour off grease. Put all ingredients in crock pot except Dorito chips. Mix and cook low 4 to 6 hours. Last 15 minutes before you are ready to eat, add Dorito chips and stir.
These are so easy and wonderful. You can’t believe it!
BBQ Ribs
Country Style Ribs
Onion
Bottled BBQ Sauce (any kind you like)
Sear ribs on all sides to seal in juices. Place in crock pot. Cover with sliced onions and BBQ sauce. Cook on low 8-10 hours. Yummy!!!
Serve with baked beans, cornbread…and this salad is great:
Caesar Coleslaw
1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing
Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!
Rice and Beans and Sausage
3 celery ribs, chopped
1 onion, chopped
4 garlic cloves, minced
1 3/4 cups V8 juice (or tomato juice)
2 16 oz. cans kidney beans, drained
3/4 tsp dried oregano
3/4 tsp. dried thyme
1/2-3/4 tsp. red pepper flakes (less if you don't like spicy)
1/2 tsp pepper
2 lb. fully cooked smoked kielbasa cut into 1/4 inch slices.
4 cups cooked rice
Combine all ingredients except rice in slow cooker. Cover. Cook on low 4-6 hours. Serve over rice. Yummy!!
Creamy Crockpot Chicken
1 envelope dry onion soup mix
2 cups sour cream
1 can cream mushroom soup
Salt and pepper to taste
6 boneless, skinless chicken breasts
Combine first 4 ingredients. Pour over chicken in crockpot. Cook on low 8 hours. Serve over noodles or rice.
CROCKPOT CHICKEN AND RICE CASSEROLE
4 chicken breasts
1 can cream of celery soup
1 can cream of chicken soup
1 can cream of mushroom soup
2 stalks celery, diced
1 bay leaf
1 large onion, chopped
1/2 teaspoon Bell's Poultry seasoning
3 cloves garlic, minced
1 cup Minute Rice
Mix the cans of soup with the rice at the bottom of the Crockpot. You may substitute the type of soup you use in any combination (for example: 2 cans cream of chicken soup and one can celery soup).
Add the diced celery, onion, and garlic and stir. Submerge the chicken in the soup.
Turn heat to high for 10 minutes, then reduce to medium and cook for 4-5 hours. Or cook on high for 3-4 hours.

This is fast and easy on my opinion boil some sweetcorn once it's hot take them out then then put butter on it and make rice with pigeon peas easy and delicious.
ask your hubby to cook!
mmm...I know that my husband is very picky on vege's too, but sometimes I hide them and he loves what ever it is!
Try light versions of pasta dishes, or you could do some cassaroles that are lighter versions of the heavy ones.
One thing that I know would be kind of fun for you is to have your friends/family cook different things and bring them over when the come to visit baby. Ask them to have the recipe on a card so you can recreat it if you all like it!
Stuff some chicken breasts. Cut it like you would a bread roll, not all the way through, throw some cheese in or mushrooms, whatever experiment. You can wrap it in parma ham, bacon, fry it for a couple of mins each side, chuck it in an oven for 20-30mins (180degrees), and you're done. What about fajitas? Cut strips of chicken cover with some oil, get some fajita mix from the supermarket roll them around in it, fry and serve in a tortilla with cheese and soured cream. You could make pizza, make extra dough and par cook a few bases then freeze them, then you can just whip them out later put on a topping and cook. You could try bbc.co.uk/food, there you can pick healthy option, ingredients, quick option and it will leave recipies that suit your needs.
Does he eat chili? You can add corn to chili, it adds a nice sweet crunch to go with the heat. Or spagetti sauce. Shred some carrots, ziccini, yellow crooked neck squash etc... Add it to store bought sauce, and some hamburger aor hamburger and sausage cooked and simmerd for about 30 min, he probably won't even know there are extra veggies in it, Specially if you slice some mushrooms into it as well, to cover up the other veggies.
use a little olive oil flash fry some thinly sliced chicken with crushed/diced garlic, mushrooms a little chilli powder add some sweetcorn towards end of cooking and serve with rice or noodles
Your husband must eat some other vegetables or he'll end up seriously malnourished, hopefully your own diet is not so limited in the veg and fruit department. But anyway..
get him on to soups. start with Pea. mushroom or chicken with sweetcorn soup, with warm crusty bread. later you should try him on pumpkin soup - it's amazing with a drop of sour cream or cream drizzled over when served. its so easy too just chicken stock and pumpkin boiled and blendered. (by the way most soups are made that way, if you want them chunky, skip the blender stage). look up some soups on the net or buy a book..
