Saw it on "Diners, Drive Inns and Dives" on the food channel. A Diner in New Jersey serves them. Great reviews from the customers. Think I will try it. Doesn't look hard to make.

I've had toast like that, but never a pancake.....weird.

I have done that with a piece of toast, it was called toad in the hole. Saw it on the Frugal gourmet years ago. Have not tried it with a pancake yet. But they are good!

Not a pancake but white bread fried with an egg in the hole. We called them Arabian Eyes, I can't remember why.

at first i thought you meant a donut, but that usually doesn't normally have an egg in the middle (some made for Easter have a whole egg in the middle, shell and all).

but then i thought of a recipe i used to make in the microwave with plain (or not), toasted (or not) bread. cut a hole in the top of two pieces of stacked bread and break an egg into the hole. comes out creamy in the micro. never tried it in a skillet.

we called it a toad-in-a-hole. don't know what it's called with a pancake. i'm sure it is different.
