Well, I'm half indian, so spices such as turmeric, coriander, mustard seed, cumin, ginger, and chilies invariably find their way into my dishes.

However, I really love sage and basil in pasta dishes.

And garlic!

oregano, mint, garlic, chile,

Garlic. It adds flavor to nearly anything. It's good for, too.

Oregano and dill. Rosemary works also. They're all good if you know when to use them.

basil
oregano
cumin
garlic

I love white wine and SAGE with fish.

Tarragon, Basil, Rosemary....

My favorite thing... being creative with herbs & spices. There are a few grinder mixes I love, but mostly I like putting my own flavors into a dish. One of my favorites is tarragon for fish and chicken. I go through a lot of fresh garlic, so that's a mainstay in my house. But all the other herbs, basil, oregano, rosemary (another favorite), sage, mint, cilantro... the list goes on. I make my own stuffing mix from whole wheat bread. It's loaded with herbs. It makes the most amazing stuffing and it has a wonderful aroma. I store it in large zip lock bags. Sometimes when I need bread crumb for something, I'll use the stuffing mix and finely grind that. Spices I use the most: ground pepper, sea salt, dry mustard, cayenne pepper, cumin, Hungarian paprika (sweet and hot), chili powder, cinnamon, nutmeg, curry and more.

But that's what cooking is all about... the wonderful flavors and aromas of all those herbs and spices.

garlic-pepper seasoning, onion powder, abdobo and sagzon goya.

Sea salt.cilantro,rosemary,thymn,lemon/orang... zest,roasted garlic cloves,fresh chives.Black-green-red whole peppercorns.

Rosemary, tarragon, and dill weed for chicken.
Oregano,garlic,mustard seed for pork.
Dill weed, basil, lime zest, lemon zest, for fish.
Gralic cloves,cracked black/white pepper,cracked mustard seed,sea salt for beef.

Garlic and onion............use them in about everything I cook!!!!

basil, oregano, turmeric, garum masala, black pepper, paprika, cumin, allspice, nutmeg

grated nutmeg is fantastic in a lot of meals but you mustn't use too much.
