Light & Fluffy Sponge Cake
Ingredients
3 eggs
125 ml cooking oil
125 ml milk
175 ml sugar
1 cup cake flour
3 teaspoons baking powder
1 teaspoon salt
Directions
1Preheat oven to 180°C (375°F).
2Grease non stick cake pan
3Beat together eggs, oil and sugar, beat until light & fluffy.
4Add flour, salt & baking powder.
5Mix well with electric beater.
6Pour into baking pan & bake for approx 15-20 minutes.
7PLEASE NOTE: For a chocolate cake add 2 teaspoons of unsweetened cocoa to 120ml warm water & add to mixture, note that chocolate cakes should take another 10 minutes to cook.

2/3c water or milk
1 stick melted butter
3 eggs
Why are butter and eggs necessary in cakes?
Butter has three roles in cakes: to make the cake light and delicate by holding air bubbles produced by leaveners like baking powder or soda; to make the cake tender by coating the flour protein; and to carry rich flavors. Stick margarine and shortening can substitute for butter; in fact, shortening is already aerated before you buy it, so it can produce a fine, tender cake. A margarine spread that is soft at room temperature can't substitute for butter, though.
Eggs have two parts, whites and yolks, which do two different things. Whites are an incredible drying and leavening agent, and yolks are nature's great emulsifiers for creamy texture.
