Best way to cook steak?!


Question: I just bought 4 steaks to make for dinner. They are marintating steaks. I have them in the fridge, I will be cooking them in about an hour or so. What temp and for how long should I cook them in the oven?

If you're going to do steak never do them in the oven unless you're going to broil, if you're not very experienced in the kitchen I wouldn't recommend using a broiler because there are additional precautions to take with that. So do it on the stove, heat a large saute pan on high heat, be sure to put enough olive oil to coat the pan. It will smoke so be sure to ventilate the area well, but this is the best and only way to sear in all the flavor that you have gotten from marination (Helpful Hint: do not salt the meat until you have cooked it and it is ready to eat otherwise your meat will be tough because salt is a drawing agent meaning it draws all the moisture out of your steaks). So what you want to is put some salt in the bottom of the pan( I realize what I just said, but read on...) kosher or sea salt works best, then place the steaks in the pan, this is going to form a beautiful crust on the outside of the steak ( but won't effect the steak in a negative way as it will during marination) now the key is to leave it, leave it for about 45 seconds to a minute. It's going to hiss and scream and sound like its burning and there will be smoke and you'll be cursing me the whole time, but TRUST ME if done correctly this is the only way besides the BBQ to eat steak. So then you flip it and let it sit for another 45 seconds to a minute, you're not done yet though, continue flipping but turn down to med to med high heat but now only flip every 2 to 3 minutes. You should do this for a total of about 5 to 6 minutes depending on the temperature you like for your steak, that would be about medium rare so cook a little longer or shorter accordingly.(Helpful hint: in order to get the most heat out of your pan as well as even cooking for your steaks cook them 2 to 3 at a time unless they are really small, overcrowding the pan will result in soggy steaks because there is not enough heat to cook all 4 at once). Best way to cook steak is barbeque. Grill on each side at med to med high heat. 5 minutes on each side-turn only once.

i would cook them on top of the stove. for steak, you really want to sear the outside. if you must do them in the oven, i would broil them about 4 minutes on each side.

I like to use a skillet or a pan-roast method rather than baking a steak.

There are three tricks to cooking steak..

The first is right in your hand. If you hold your palm face up, and press at the fleshy pad at the base of you thumb, you will find that pressing a piece of raw meat feels very much the same. If you touch your thumb to your index finger, and feel the same place, it feels like rare meat. Touching your thumb to your middle finger feels like medium rare. Touching your thumb to your ring finger feels like medium. And touching your thumb to your little finger feels like done.

The second trick is knowing when to turn the meat over. Let’s assume we are cooking a steak on the stove top. Heat the skillet over high or medium high, add your fat or cooking spray and the meat, watch for a pink liquid to begin to pool on the top surface. This is when you turn the piece over for medium rare. For medium or well done you’ll have to wait for deeper pools. For rare just look for a liquid sheen. Again wait for the liquid to show. The liquid observations should correlate to the hand trick described above. If you are using the pan roast method, you need a very hot oven proof skillet. Brown the meat to a rich mahogany on the first side (about three minutes) then turn it over and sear for another minute. Then put in a preheated 375 degree oven for 8-10 minutes for medium rare,

The third trick is to let the meat rest. If you cut the meat right away the liquid that is moving from one side to the other to escape the heat will gush out, leaving the meat dry. Just wait, the liquid will reabsorb and you’ll have nice juicy meat. Wait 5-7 minute for thin cuts and longer for thicker cuts.

Enjoy your steaks.

Set the oven to broil on high. Put the steaks on a rack over a pan as close to the heat as possible. Cook for 3 to 8 minutes, turn, then cook again. The amount of time depends on how well you like them done.

if they are marinating steaks, they might be a little tougher that "grilling steaks" like rib eye or t bone so i would tenderize them with a "meat mallot" or just cover with plastic wrap and pound with ur fist....then i would season w/ garlic salt, pepper, and get the Grill hot so that it sears the meat when u put the meat on, do 1 side at ta time then lower heat bout 6 minutes on each side-turn only once. basting with garlic butter through out. serve with saute onions and button mushrooms sauteed in butter.
