1 pound ground turkey
1/2 cup diced tomato
1 medium onion chopped
1 clove garlic chopped
2 teaspoons ground cumin
1 teaspoon oregano
1 large chipotle pepper chopped
1/4 cup chopped cilantro
2 teaspoons vegetable oil
Taco shells
Taco sauce
Grated cheese
Sour cream
Lettuce

In large pan brown onion and ground turkey. After browned add garlic, oregano, cumin, tomato, cilantro, and chipotle pepper. Simmer on low heat for twenty minutes. Serve in taco shells with lettuce, cheese, sauce and sour cream.

Turkey Meatloaf

1/2 red bell pepper, seeded and coarsely chopped
1 medium carrot, coarsely chopped
1 medium onion, coarsely chopped
1 garlic clove
1 tablespoon extra-virgin olive oil
1 1/2 pounds ground turkey
1/2 pound ground pork
1/2 cup bread crumbs
2 large eggs
1 1/2 teaspoons salt
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
8 strips of bacon


1. Preheat the oven to 375°. Place the red bell pepper, carrot, onion and garlic in a food processor and pulse until the mixture is finely chopped. In a medium skillet, heat the olive oil over medium heat. Add the chopped vegetables and cook until softened, about 5 minutes.
2. In a large mixing bowl, combine the vegetables, turkey, pork, bread crumbs, eggs, salt, Worcestershire sauce and ketchup and mix well. Place the meat mixture in a 9-by-13-inch baking dish and, using your hands, form it into a loaf. Cover the loaf with the bacon strips. Bake the meat loaf, uncovered, until cooked through, about 1 hour.
3. Pour off the melted fat, slice the meat loaf and serve

I like the turkey on the ground. They are hard to catch when they are in the air.

Follow any meatloaf directions, taco, hamburger, etc using the ground up bird. Then take a nap.

Swedish meatballs are good made with turkey.

Other than burgers? I put ground turkey in my chili instead of beef. You can do a nice meatloaf with ground turkey. Below was my recipe for meatloaf made with beef.... just replace the beef with turkey and you might need to adjust the cooking time a bit.

? 1-1/2 lbs gr. beef (or ground turkey)
?1 med. onion (grated)
? bread crumbs (preferably Pepperidge Herb Stuffing Mix)
? milk to soften stuffing mix
?1 egg
?? to ? cup chopped gr. pepper
?parsley
? salt & pepper
?1 med (16 oz?) can tomato sauce
?1 med. onion (sliced thin)
?gr. pepper strips

- Pre-heat oven to 350 deg. (175 C)
- Put stuffing mix in sm. bowl or measuring cup. Pour just enough milk to cover and put aside
- In med. bowl mix all remaining ingredients but the last 3
- Squeeze milk out of stuffing mixture and add to meat mixture and mix well.
- Shape meat mixture in loaf shape and put in baking dish. (dish should be larger than meat to allow room for sauce and juices from cooking.)
- Place sliced onions and gr. pepper strips across the top
- Pour tomato sauce over all

Bake for about 1-1/2 hours, occasionally spooning juices over meat. Sauce will mix with juices from meat to make a nice sauce. The meatloaf will be very moist. Serve with homemade macaroni and cheese, or whipped potatoes and a green vegetable and/or salad.

You can make turkey meatballs, or Sweedish meatballs with ground turkey. You can buy a turkey gravy and add sour cream to it for a nice gravy for turkey meatballs. Just add breading, an egg, and some herbs of choice, lots of Italian herbs and spices and simmer in the gravy. You can have it that way, or cook them in Italian sauce. If you simmer in the gravy and want the sour cream, add that when they are done cooking and you're almost ready to serve.

Turkey Burritos

Cooking oil (or spray) - 1 tbsp
Ground turkey breast - 1 lb
Salsa - 3 tbsp
Onion (chopped) - 1/2 cup
Green chiles (chopped) - 1
Shredded low fat cheese - 1 cup (4oz)
Garlic (minced) - 2 cloves
Water - 1/2 cup
Dried oregano - 2 tsp
Ground cumin - 2 tsp
Chili powder - 1 1/2 tsp
Flour tortillas - 6

Cooking Instructions

Heat skillet on medium-high heat with cooking oil
Add in onion and garlic, and cook until tender (about 3 minutes)
Add in ground turkey breast and cook until the turkey is cooked (about 8 - 10 minutes)
Stir well to crumble the turkey
Add in water, salsa, oregano, cumin, chili powder, and chopped green chilies, and cook for 5 minutes on medium heat
Warm the tortillas, and add 2 to 3 tbsp of shredded cheese on each tortilla
Add about 1/2 cup of the ground turkey mixture to each tortilla
Roll up and serve

This is a recipe my sister-in-law made with ground turkey. She flipped the ground turkey out of it's square package and put it into a rectangular cake pan and baked it as a whole piece. When it was done, she cut it into cubes and made the following salad:

The turkey cubes - 1 lb or so
1 or 2 avocadoes - skin & seed removed and diced
3 to 4 Roma tomatoes - diced
1/2 medium yellow onion - diced
1 can kidney beans - drained and rinsed
1 bottle either French or Catalina dressing - can be fat-free or regular
Doritoes or Tortilla chips or even Fritos

Mix together the kidney beans, onions, tomatoes and turkey. Add the salad dressing - enough to generously coat everything. Set it the fridge for 30 minutes to meld the flavors. Then add the diced avocadoes and break up some of the chips - whatever kind you want to use. Add a little more of the salad dressing and mix well but gently. Serve with more chips and dressing. She put a few more whole chips on her plate, put the salad on top of it, and added just a little more dressing to the plate. It was very good. I seem to remember she used the blue corn chips one time - low-fat ones.

Use ground turkey in any recipe calling for ground meat. Better for you and taste is pretty good.

Fry turkey meat in a skillet until brown then add taco seasoning packet. Wall.....you have taco meat!!! Makes you some yummy tacos.
