Anyone have a great recipe for Corned Beef Hash I have?!
Answers: already cooked the Beef for Reubens and have a bunch left over my bf requested this and I love to please him as he is the absolute best
Corned beef hash with poached eggs served with cornbread
Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
For the corned beef hash
4 potatoes, diced into cubes
3 tbsp olive oil
1 onion, finely diced
1 garlic clove, crushed
340g/12oz corned beef, tinned
salt and freshly ground black pepper, to taste
1 tbsp vinegar
2 free-range eggs (per person)
tomato ketchup, to serve
For cornbread
300g/10?oz plain flour
315g/11oz cornmeal
200g/7oz icing sugar
1 tbsp baking powder
1 free-range egg
250ml/9fl oz milk
200g/7oz butter, melted
Method
1. For the corned beef hash, place the potatoes into a saucepan and cover with water. Bring to the boil and simmer until just tender. Drain and set aside.
2. Heat a frying pan until hot. Add one tablespoon of the olive oil, the onion and garlic and fry for two to three minutes.
3. Add the potatoes and fry for a further minute.
4. Crumble in the corned beef and mix together.
5. Spoon the mixture into a soup dish then place under the grill for three to four minutes, until crusty.
6.Bring a pan of water to the boil, add the vinegar and whirl the water around.
7. Crack an egg into a ladle. Pour the egg into the pan and simmer for two minutes, until ready. Remove from the pan and drain.
8. Remove the Hash from the grill and top with the egg.
9. Top with a squeeze of ketchup and serve with hot, buttered corn bread.
10. For the cornbread, mix together the flour, cornmeal, icing sugar and baking powder.
11. Make a well in the centre of the dry ingredients and add the milk and egg. Mix together from the centre outwards, incorporating the dry ingredients into the wet gradually to create a dough-like paste. Add the melted butter last.
12. Place in a hot baking tin. Place in a hot oven for about 15 minutes until golden brown.
13. Remove from the oven, allow to cool slightly. Turn out, cut into slices and serve with the corned beef hash.
Corned Beef Hash Recipe
Ingredients
Canned Corned Beef
Frozen Hashbrowns
Salt or Seasoning Salt
Black Pepper
Olive Oil
Directions
In a frying pan, heat up the olive oil and fry up your frozen hashbrowns about 4 cups. Season with Salt/Seasoning Salt and Black Pepper to your liking.
When Hashbrowns are done or close to done cooking add the can of Corned Beef..stir until the Corned Beef is heated thoroughly.
Serve Up with Eggs Over Easy!

I usually buy potatoes O'brien at the grocery which already has peppers and onions then add the corned beef to them about halfway thru the cooking..very easy and very delicious!!!! not really a good hash without the peppers and onions!!!!!
I make the one like Kate with the hashbrowns and top with cheese before serving for breakfast with eggs.You can add onions to it also.
Corned beef makes a nice meal if served with parsley buttered red potatos,cabbage and carrots for a veggy...
Corned Beef Patties
Pastry
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
6 Tbsp. shortening
1 egg yolk, slightly beaten
1/3 c. milk
Sift dry ingredients; add shortening and mix in thoroughly with a fork. Add egg to milk; add to dry ingredients to make soft dough. Turn out on a floured board and toss lightly until the outside looks smooth. Roll out half the dough 1/8 inch thick; cut into quarters. Fit each into muffin pan; fill with the corned beef mixture and fold the edges of the pastry over the center. Pinch the edges together on the top. Repeat with the remaining dough. Bake in a hot oven at 425 degrees for about
20 minutes. Serves 8.
Corned Beef Filling:
2 Tbsp. butter
1/4 c. chopped onion
2 Tbsp. flour
1 1/4 c. cooked corned beef,
cut in pieces*
1 1/2 c. canned tomatoes
Melt butter, add onion; cook slowly until soft. Add flour; stir until well blended. Add remaining ingredients; bring to boil; stirring constantly until thick and smooth; let simmer about 10 minutes.
I just make my own sweet cream sauce and add potatoes and meat my husband likes tobasco sauce in it
2 T oil (or bacon grease)
dice 3 med potatoes
1/2 onion chopped
1-2 cups chopped corned beef(depending how much meat you want)
the oil should be hot when you add your potatoes,let them brown,then add your onions.turn down your heat to med.when the onions are translucent,add your corned beef stir and let cook about 3 mins until the corned beef is hot....S&P to taste
