Store-bought cake mix is way too sweet - how to make it less sweet?!


Question: I just baked cupcakes from store-bought yellow cake mix but it's waaay too sweet. I use unsweetened applesauce instead of oil.

I added a half a handful of flour and a pinch of baking powder (and a couple tablespoons of water) to the mix - the cupcakes looked perfect but they were still way too sweet.

I'm thinking that I need to add more flour next time. I didn't want to put in too much because I didn't want the cupcakes to be totally ruined. What is the right ratio of flour and baking powder to add to a cake mix? Or is there another baking trick?

you need to just start a scratch recipe. If you replaced the oil with applesauce, that will only make it sweeter. Even if it says "unsweetened", the applesauce still tastes sweet, right? They are only saying they didn't add more sugar to the already sweet apples.
In my opinion, cake mixes are too sweet in general. If I were making a recipe of muffins that I wanted to be healthier, I would replace the milk or liquid with applesauce and cut the sugar. I always dip my finger (or a spoon) in the batter to see if it is sweet enough.
As for the ratio of flour to levening, it depends...
If I am making muffins, its 3.5 cups flour to 2 Tb of baking powder. Scones are more like 3.5 cups flour to 1 Tb of powder. For cakes, follow the recipe to the letter, as the ratio has already been determined by the writer of the recipe. If you do this and it still doesn't work, ditch the recipe...it's a dud!
Also, remember if you are adding sour cream or buttermilk you have to add baking soda or it won't rise properly.

sorry but i don't think there really is when you buy a mix... just bake your own cupcakes from scratch, and add less sugar if you need to. there are a lot of great and easy recipes on the internet... its so much more fun! hope this helps! good luck!

You're going to more trouble fixing the box than you would mixing up a cake from scratch.
