What is your favorite recipe using cilantro?!


Question: My husband makes this wonderful olive/cilantro salsa that goes with orange juice/soy sauce marinaded chicken. It is in the Well Filled Tortilla cookbook. I really don't like cilantro, but this is glorious!

hmmm...thats a hard one, considering we use cilantro in almost all the dishes we make...but if i have to chose one...I would say our cilantro/garlic bread...
butter, garlic and cilantro mixed together and then coated onto a good bread and then baked for 20 min. eaten with flavored olive oil....its Yummy!!!

I love this recipe and have made it many times. I just add about a dozen slices of jalapeno from the jar, so I don’t have to deal with cutting fresh jalapenos. And I put it on the stovetop to thicken up before serving.

Slow-Cooker Pork Chili Verde
From Country Woman

Pork slowly stews with jalapenos, onion, green enchilada sauce and spices in this flavor-packed Mexican dish. It's great on its own or stuffed in a warm tortilla with sour cream, grated cheese or olives on the side.

INGREDIENTS
1 boneless pork sirloin roast (3 pounds), cut into 1-inch cubes
4 medium carrots, sliced
1 medium onion, thinly sliced
1 cup minced fresh cilantro
4 garlic cloves, minced
3 tablespoons vegetable oil
1 can (28 ounces) green enchilada sauce
2 jalapeno peppers, seeded and chopped
1 tablespoon cornstarch
1/4 cup cold water

Hot cooked rice

Flour tortillas, warmed


SERVINGS 8

DIRECTIONS
In a large skillet, saute the pork, carrots, onion, cilantro and garlic in oil in batches until pork is browned. Transfer to a 5-qt. slow cooker. Add the enchilada sauce and jalapenos. Cover and cook on low for 6 hours or until meat is tender.

In a small bowl, combine cornstarch and water until smooth; stir into pork mixture. Cover and cook on high for 30 minutes or until thickened. Serve with rice and tortillas.

Oh, what ISN'T a good recipe for cilantro, it really freshen dishes up. I uses in combination with a lot of onion/.tomato/olive oil usage, kinda of mexican bean corn things. Or lemon / lime and fish and olive oil is a good combination to garnish with fresh cilantro, put some on a fresh salad with a vinagerette with a grilled lime chicken-- it compliments lime wonderfully!

Curried basmati rice with shrimp. It's really easy.

In about 1 Tbsp olive oil heat up some minced garlic and ginger until fragrant. Add 1 cup basmati rice and stir until well coated. Add 1 Tbsp curry powder and stir well and cook for a couple minutes. Add 2 cups chicken broth, stir well. Slap a lid on and time for 20 minutes. When there's about 5 minutes left, toss in some thawed baby shrimp, chopped green onions and cilantro.

I love this dish, I make it often.

not sure if it's a salsa or a pico de gallo, but I take fresh tomatoes, onions, jalapenos, lime juice, and cilantro--put it in a food processor, leave it a bit chunky and serve it with tortilla chips--yummy!

I also chop fresh cilantro and put tons of it on top of stir fries (I don't like to cook it though). I also use it as a garnish on chili.
