As a former chef the others are all right, in the restaurants the griddle or flatop grill in some areas are well seasoned, like a good pan you do not wash them with soap, they are keep well cleaned but not like other piece of kitchen equipment, it is used all day, for pancakes and eggs sometime in the morning, grilled cheese and burgers at lunch and other mains at dinner.

Temparture is a crucial thing also, home griddles are electric, most one in pro kitchen are gas fired and keep the heat better and are solid cast aluminum so they do not drop in temp when loaded up.

It's the griddle. It gives the perfect surface and the perfect heat.

A griddle. You can do it at home too. I do it all the time. I have a two burner griddle that I use just for pancakes. Perfection with every pancake. I use an icecream scoop to ensure all my pancakes are the same size.

Use a flat grill or some electric fry pans work great.Spray then lightly oil your grill.Use a 2 or 3 oz.ladel.Cook as usual.
