the only thing the salt does is add to the flavor.....without it the bread tends to taste flat...(my opinion)
the sugar that is found naturally in flour and the sugar that is added feeds the yeast making it rise.

Flavour. If you have ever tasted bread without salt, you would never eat it again.

It gives the bread flavor.

The salt is literally used for flavour. It does nothing to aid the yeast. It's the sugar that helps yeast ferment. xXx
