1. chocolate pudding

1 cup milk
1 ounce chocolate
1/2 cup sugar
1/8 teaspoon salt
1 tablespoon cornstarch
2 tablespoons cocoa
1 tablespoon butter (no substitutions)
1/4 teaspoon vanilla
Directions
1Heat milk with chocolate in the top of a double boiler, beating well when chocolate has melted.
2Mix sugar, salt, cornstarch and cocoa; blend with a little of the chocolate milk.
3Return to the double boiler and cook until thickened, stirring constantly.
4Add butter, cool and add vanilla.
5Serve with lightly sweetened whipped cream.


2. brownie pudding

1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsweetened cocoa , divided
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1 teaspoon vanilla
2 tablespoons butter , melted
1/2 cup semi-sweet chocolate chips
1/2 cup brown sugar , firmly packed
1 3/4 cups boiling water
Directions
1Preheat oven to 350 degrees.
2Combine flour, granulated sugar, 1/4 cup cocoa, baking powder and salt in a bowl.
3Stir in milk, butter and vanilla until smooth.
4Stir in chocolate chips.
5Spread in ungreased shallow 1 1/2 quart casserole. Sprinkle brown sugar and 1/4 cup cocoa on top.
6Place in oven, pour boiling water over top.
7Bake 35 minutes, cool 10 minutes before serving.
8Serve with ice cream if desired.


3. vanilla pudding

3/4 cup sugar
1/4 cup cornstarch
2 1/2 cups milk
1/2 teaspoon salt
3 egg yolks , slightly beaten
1 tablespoon butter
1 teaspoon vanilla
Directions
1In medium double boiler, cook sugar, cornstarch, milk and salt. When mixture begins to thicken, add part of mixture to egg yolks; mix well, then pour egg mixture back into mixture in double boiler.
2Cook until thick; take off stove, then add butter and vanilla.
3You can use as pudding and top with Cool Whip or use pudding with bananas for banana pudding You can also add 2 unsweetened chocolate squares at the beginning and make a chocolate pie or pudding.
4For butterscotch pie or pudding, use 3/4 cup light brown sugar firmly packed and 1/4 cup sugar instead of 3/4 cup sugar, then cook as directed.
5You can also make a banana plate pie with the vanilla mixture, just cook as directed.
6In baked pie shell, line bottom with bananas; pour a layer of pudding, then a layer of ba nanas, then pudding.
7You can top with Cool Whip or meringue.

1 cup flour
1 cup white sugar
1 teaspoon baking powder
1/2 cup butter or margarine
1 cup water
6 apples , peeled and sliced
Directions
1Combine flour, sugar and baking powder in a mixing bowl.
2Cut in butter or mrgarine with a pastry cutter until like cornmeal; set aside.
3Grease n 8x8" glass pan and slice in 6 (or less) apples.
4Spread flour mixture evenly over fruit.
5Pour water evenly over all and do not stir.
6Bake at 375°F for 1 hour, or until crust is browned.
7Serves 9.
8This recipe can be adapted for diabetics by replacing the sugar with artificial sweetener (i. e. Splenda).
9Note: For a 9x13" pan, make 1 1/2 times the recipe.
10Serves 12-15.
11Instead of apples, use pears, peaches, raspberries or blackberries.
12Serve with milk, cream, or ice cream and enjoy.

5. mango pudding
3 mangoes
60 g gelatin
2 cups non-dairy whipped topping
3 egg whites
260 g sugar
300 g ice cubes
300 g mango and vanilla ice cream (soft but not melted)
750 ml water
Directions
1Chop and dice mangoes then set aside.
2Pour gelatine and sugar into a big saucepan and set aside.
3In another small saucepan, bring water to a boil then pour boiled water into the gelatine and sugar mix.
4Heat mixture over medium fire, stir well till gelatine and sugar dissolve.
5While heating gelatine and sugar mix, beat the 3 egg whites till stiff and fluffy for about 10 minutes.
6Add ice cubes to dissolved gelatine and sugar mixture.
7Stir till ice cubes melt.
8Add beaten egg white to mixture quickly, stir well till mixture is smooth.
9Add non-dairy cream to mixture and stir well.
10Add ice-cream and stir well till ice-cream melts.
11Add in chopped and diced mangoes and stir well.
12Pour pudding mixture into jelly moulds and allow it to set (in the fridge for about 20 hours).

6. banana pudding
4-5 bananas , ,sliced (use a little lemon juice to prevent browning)
1 box vanilla wafers
1 box Jello Instant Vanilla Pudding Mix
8 ounces cream cheese (1/3 less fat)
1 can Eagle Brand Condensed Milk (low fat)
1 large Cool Whip (lite)
Directions
1Mix cream cheese with mixer until soft and smooth.
2Add condensed milk then add vanilla pudding mix that has been prepared as directed on the box.
3Layer: Vanilla Wafers, bananas, pudding mix- Repeat layers , end with pudding mix.
4Let it set in the refrigerater until chilled.
5Top with Cool Whip.
6Use large oblong dish.

Self Saucing Chocolate Pudding

1 cup self-raising flour
? teaspoon salt
2 tablespoons cocoa
? cup brown sugar
? cup milk
2 tablespoons melted butter
Few drops of vanilla essence

Sauce:
? cup brown sugar
2 tablespoons cocoa
1? cups boiling water


Method

Sift flour, salt and cocoa into an oven proof dish.
Add sugar.
Stir in milk together with melted butter and vanilla essence.
For the sauce, mix all ingredients in a separate bowl.
Pour the mixture over the main pudding mix.
Bake in a moderate oven 180 C (355 F) for about an hour.
Serve with cream or ice cream.

It takes a bit in the oven but it's worth it. I always make this one!
