What kind of dough/bread is Panera Bread's asiago cheese bagel made out of?!


Question: I got an asiago cheese bagel from Panera Bread the other day and it tasted really good and I was wondering if anyone knew what kind of dough there asiago cheese bagels are made from? it didnt taste like it was made from regular bagel dough

Panera's Bagels are sourdough based. There is asiago chunks baked in and asiago baked on top.

The cheese would cause it to be denser and fattier-maybe that's why.

It's the same base as their other bagels--sourdough from some variety of unbleached all-purpose flour. It likely tastes different because of how much fatty cheese is sitting on top. All bagels have fat, but the fat doesn't penetrate very far in most. Fat in bread makes the bread softer and less crusty.
