Different recipes for chicken?!


Question: I am looking for healthy recipes for chicken breasts/strips. I bought some boneless/skinless chicken and cut it up and cooked it on the stove with olive oil and added it to some rice. I will add some peppers to it also. I am looking for other healthy ways to cook some chicken that taste good too. I don't like anything spicy, but looking for different ideas- maybe with apple cider, oranges, etc?

6 chicken breast halves
3 large apples
3 tablespoons butter
1/4 cup chopped green onion
1/2 teaspoon dried leaf basil
1 cup dry white wine
2 teaspoons salt
1/8 teaspoon black pepper
1/4 teaspoon ground nutmeg
1 cup heavy cream
1 teaspoon all-purpose flour
2 tablespoons dry sherry or brandy
2 egg yolks

Trim excess fat from chicken breasts; rinse and pat dry. In a large heavy skillet, melt two tablespoons of the butter over medium heat; add chopped onion and basil and saute for a few minutes, or until onion is tender.

Add three chicken breasts to the skillet; saute chicken for fifteen minutes, or until golden. Add remaining butter and remaining chicken breasts; saute for fifteen minutes, or until golden.

Return all chicken to the skillet; add apple. Cook over medium low heat, uncovered, stirring occasionally, about five minutes. Add 1/4 cup of wine; cook for five more minutes. Add remaining 1/2 cup of wine, salt, pepper, and nutmeg; continue cooking until apple is tender.

In a small bowl, combine cream, flour, sherry or brandy, and egg yolks; stir well. Pour over chicken; cook slowly for ten minutes longer, or until sauce is hot and slightly thickened.

APPLESAUCE CHICKEN
You probably wouldn't think of applesauce as the basis for a barbecue sauce, but this recipe combines the concentrated apple flavor with the traditional makings of a great barbecue sauce to add a delicious flavor to this grilled chicken. Be sure to pick a "no sugar added" applesauce so that this barbecue sauce doesn't turn out too sweet.
INGREDIENTS:
1 whole chicken, cut up
1 medium onion, finely chopped
1 cup unsweetened applesauce
1 cup ketchup
1/4 cup cider vinegar
2 tablespoons vegetable oil
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
black pepper to taste
PREPARATION:
Heat oil in a medium sized saucepan. Add onion. Sauté until onion is soft. Add applesauce, ketchup, vinegar, brown sugar, Worcestershire sauce and pepper. Bring to a boil while stirring. Reduce heat and let simmer

you can make chicken a'lorange by marinading a whole chicken in orange juice and brandy, then baking with slices of orange on the skin. When you remove the foil for browing the skin, remove the orange slices as well so it crisps up. Take the pan juices, add more OJ and brandy and cook that down a bit. Serve that as the gravy. Its seriously good : )
