Answers: I like to remove the tender part and put it into the fridge and I slice and boil the stump till I get a nice flavor using butter, After the ougher stalk is boiled tender I add the tender tops only the color is now 2 tone. Outherwise the food is fab as a side. What can I do to make the dish look more appealing add food coloring to the boiled stalks?
Slice the stalks lengthwise before boiling then when you add the tops you'll get a green and white effect. You can add toasted sesame seeds on top as a garnish, or mince red pepper and toss some on when you're ready to serve it.
I also like to cook some baby carrots or sliced carrots and toss them with the broccoli.
I wouldn't but then again I don't mind the variations in color...the stalk is lighter than the tops anyway, I'd leave it alone and enjoy.
normally the way to retain the color you would shock them after briefly boiling them....but, if you are boiling the stalks until tender there is little you can do bring the green back and it seems you only option would be to boil the floweret the same amount of time.
I peel the stalks cut on the bias and use in stir fry.
The tops I steam and as soon as they are tender I add them to ice water that stops the cooking and keeps them green.
