What's your best fried oyster recipe?!
1 1/2 dozen oysters
flour
1 lightly beaten egg
2 Tbs milk
1 1/2 cups dried breadcrumbs
2 Tbs sour cream
oil for deep frying
1 avocado
1 chopped spring onion
1 Tbs lemon juice
1 Tbs water
1 clove garlic, crushed
Toss the oysters in flour, dip in combined egg and milk, then coa twith breadcrumbs. Deep fry in hot oil until lightly browned. Blend avocado, onion, lemon juice, water and garlic until smooth. Serve over the oysters with a little sour cream.

I don't eat oysters, but here's a recipe for Texas Fried Oysters
1 pint oysters, drained
salt and cayenne pepper, to taste
3/4 cup all-purpose flour
3/4 cup yellow cornmeal OR Masa Harina (corn flour)
Sprinkle the oysters with salt and cayenne pepper. Mix together the flour and cornmeal (or corn flour) until combined evenly. Roll the seasoned oysters in the flour and set aside on waxed paper.
Heat oil in large pot or deep fryer to 375°F. Deep fry oysters in batches until golden, about 2 minutes. Do not overcrowd, Do not overcook. Serve immediately
The best fried oysters are the ones cooked like Shrimp Tempura, using the Japanese breadcrumbs called Panko.

OYSTER SOUP
3 pints oysters
1 1/2 pints milk
2 eggs
3 tablespoons butter
1 slice of lean ham
1 stalk of celery or pinch of celery seed
This is a famous old Virginia recipe.
Pour oysters in colander and put the strained liquor in a kettle and add enough water for quantity desired. Add salt, pepper, celery, and ham.
When the water has boiled, skim off the foam. Drop the oysters in and boil a few minutes, then drop in the beaten eggs and milk and a little thickening of flour made with part of the milk.
Finally, add the butter and bring to a boil once, stirring to prevent eggs from curdling. Remove from heat.
Pour into a tureen over small squares of toast and serve immediately.

dip in butter milk and dredge in crushed crackers .let set 10 mins to set the crust..deep fry until golden brown.....these are addictive so make plenty
Not exactly "fried", but my favorite:
Sautee one pint of oysters in pan with olive oil and garlic
(only a minute or so on each side).
Remove from pan and cover/dredge individually in
seasoned bread crumbs. Place on cookie sheet, sprinkle
with Mozarela cheese. Place under broiler for a minute or
so.
Great if you have very clean oyster shells. Place one oyster on each shell.
