I have two favorites I used to get at a local deli. I just took the ingredients off the menu and made them at home. One is roasted veggies like eggplant, peppers, and mushrooms, cooked with garlic served a baguette with balsamic vinegar. The second is sliced roasted chicken breast, cold on a baguette with baby spinach, avocado, green apple, and honey mustard dressing. YUM!

Knuckle sandwich. You make it by getting toasted, balling up your fist, then serving it cold.

I like a bagel with guacamole, cucumbers, sprouts, red onion, dill sauce (dressing) and provolone cheese.

I love chicken salad sandwiches. You can go to a grocery store and buy it in a container, then I toast my bread and put it on!

how 'bout pita bread turkey green pepper and anything else you want trust me it's good.

i like beef sandwich. You put 5 or 6 pecees of beef on. Then you add lettuce, onion, cheese, and tomatoes. it is very good.

I love egg salad on toasted bread. Try toasting the bread to any sandwich, gives a little something different. Or use the toaster oven and melt the cheese with the meat, any combo you would normally use. BLT's are always oldies but goodies.

Double-Decker Club Sandwich

3 slices toasted white bread
3 Tbs. mayonnaise
4 oz. tender sliced turkey
4 oz. tender sliced ham
4 oz. tender sliced roast beef
2 strips crispy bacon
1 slice dill pickle
Lettuce
2 slices red tomatoes
2 slices American or Swiss cheese

Take 1 piece of toasted bread and lay it flat on a plate. Spread
with mayonnaise. Lay the turkey on the toasted bread, follwed by 1
slice of cheese and ham. Dress with lettuce and 1 slice of tomato.
Lay another piece of toasted bread on top and spread with
mayonnaise. Then lay the roast beef and cheese on and dress with
lettuce. Put the two strips of bacon on top with the tomato and lay
the last piece of toasted bread on top. Cut in four pieces and
garnish with the slice of pickle. Served best with fries or chips.
Yield 1 serving.

We like to use our George Foreman grill. I spray butter flavored cooking spray on the outside slices of the bread -- then put swiss cheese, deli roast beef, and more swiss cheese between the bread slices. Grill until the cheese melts.

For even more flavor -- add some carmelized onions to the sandwich. YUM!

Toast your favorite bread. Put thin slices of butter, not margarine, on what you consider the inside of the toast. Meanwhile, nuke some creamy tomato soup. Place some colby-jack cheese on the toast and close the sammich. Wrap it in a paper towel, and after the soup is hot, nuke the sammich for 25 to 30 seconds or until the cheese is melted. Sprinkle Frito's in the soup. Now, you have a quick grilled cheese sammich with tomato soup and Frito's.

chicken cobb sandwich. grilled chicken, bacon, avacado, blue cheese and tomato and a little mayo on a roll.

Lately we eat this about twice/month:

Roast Beef and Blue Cheese sandwich w/Scallion Mayo

In a blender place,
the juice of 1 Lemon
1/2 tsp Salt
1/2 tsp Dry Mustard
1/4 tsp Pepper
1 Egg (pasteurized if you are concerned)
1 clove Garlic
Blend until smooth, add
Olive Oil until the machine clogs
Stir in sliced Scallions

For each sandwich
Good quality Bun
Deli Roast Beef, sliced
Blue Cheese, crumbled
Totmto, sliced
Sweet Onion, sliced

Slice the bun, cover both sides with Scallion Mayonnaise, sprinkle one side with crumbled Blue Cheese, and the other side with slices of Roast Beef. Toast under a broiler until the Blue Cheese is melted. Fill each sandwich with sliced Tomato and sliced Sweet Onion. Serve extra mayo on the side.

My fav is crusty white bread with cheddar cheese and beetroot slices and maybe just a tiny little bit of mayo, the beetroot and cheese goes really well together.

Tomato, Mozzarella, and Basil pesto on crust italian bread. Toast it under the broiler in the oven until the cheese gets nice and gooey. YUM!!!

I was getting really bored with my plain old tuna salad on white bread when a coworker suggested I try new breads and toast them.
