Tough rib-eye steaks?!


Question: I bought 4 rib eyes, sliced thin. I cooked 2 of them, they were so tough I threw them out. Is there any saving the other 2?

marinate them, or get a mallet, and wel beat your meat. :)

Try marinating them in something before you cook them. Sometimes the extra moisture from the marinating makes them a little more tender. If it's still tough, I'd take them back to the store and complain. I'm sure they'd give you compensation.

cook 'em hot and fast. Thin sliced ribeyes make a fine brekkie with eggers and Heinz beans, IMO.

My personal taste is to marinate in italian salad dressing, then make sure you pan is HOT, and sear both sides before cooking. If the steaks are thin it would be very easy to overcook them. If you are cooking them until they brown you are probably over cooking. Try seasoning them to taste, spray your pan or melt butter which ever is your wish and make sure pan is hot (not smoking) and cook until barely done to your taste.

oh man me and my buddy got rib eye steaks the other day, they were good!!!
i marinated then in worchestershire sauce for 20 min, then he cooked them on the grill, 5 min on each side, they came out perfect, melt in your mouth
ours were 1/2 inch thick, so if yours are thinner cut down the cooking time a bit on each side
remember to only flip them once, if you keep flipping them you can ruin them

Thin sliced rib-eye steaks can be a bit tricky. They should not need marinating, but you can if you like that sort of thing. The most important thing is to NOT over cook them. I brush them with a little olive oil, sprinkle on some kosher salt and fresh ground pepper, and toss them into a screaming hot cast iron skillet. For thin ones, I would not cook them more than 2 minutes per side. Let them rest on your plate for 2 to 3 minutes before cutting into them so the juices don't all run out. For thicker ones, no more than 4 minutes per side.

i'm assuming you cooked them til well done , sear the other 2 in a hot pan , maybe even throw in some sort of seasoning or chopped veggie first to help keep them off the bottom of pan the entire time , lightly saute

Rib-eye steaks shouldnt be tough....there is a lot of intramuscular fat that helps to keep it moist. you probably just cooked them for too long.....at any rate....try marinating them overnight....that might help

You didn't say how you cooked them. And for how long. Rib-eyes are better rare or medium rare. A good marinade is:
1/2 cup oil
1 clove garlic, minced
1 tsp worsteshire sauce
1 tsp soy sauce
1tsp lemon juice
2 tsp grey poupon mustard. Marinate for 4 hours. Yummy!!!
