Egg plant recipe?!
Answers: Hey there, so does anybody have any good easy recipe for egg plant? i bought one and plan on making it for dinner tomorrow night, any recipes? it'd before one preson btw.
MEXICAN EGGPLANT
1 lb eggplant
1/2 cup boiling water
1 onion, chopped
1/2 teaspoon salt
2 cups fresh tomatoes, chopped
1/2 cup onion, finely chopped
2 cloves fresh garlic, minced
1/3 cup green chilies, diced
1/2 teaspoon fresh basil, minced
2 eggs, beaten
1 cup Monterey Jack cheese, grated
Peel and cut the eggplant into 1 inch cubes. Boil eggplant in salted water for 10 minutes. Drain. Combine remaining ingredients, except for the cheese.
Spray or brush a 1 1/2 quart casserole (which has a cover) with oil.
Cover and bake at 375F for 30 minutes. Remove cover and reduce heat to 350F.
Sprinkle top evenly with grated cheese and continue to bake until cheese melts and becomes bubbly.
OR
ITALIAN EGGPLANT
1 medium eggplant, * see note
1/2 cup butter, melted
3/4 cup dry bread crumbs
1/4 teaspoon salt
13 ounces spaghetti sauce, with mushrooms
1 tablespoon oregano
1 cup mozzarella cheese, shredded
Dip eggplant in butter, then in mixture of bread crumbs and salt. Place in buttered casserole dish. Spoon spaghetti sauce on top. Sprinkle with oregano leaves and cheese. Bake for 15 to 20 minutes at 350 F.
* Pare eggplant and cut into 1/2-inch slices.

FILLED EGGPLANT
4-5 eggplants (medium size)
1 c. ground meet
1/2 c. pasta sauce
salt and pepper

First, peel the eggplants. Leave the heads on them, and using a sharp knife, open the middle but try to make a hole coming out from the other end, set aside. In a separate pan, sauté onions then add the ground meat, the pasta sauce, salt and pepper add a little water then take one eggplant at a time, Fill the middle of each eggplant with one spoon of the meat sauce. In a separate pan, add a few tablespoons olive oil and place the eggplants side by side. Cover and cook on low heat for about 1/2 hour.

What does "it'd before one preson btw" mean?
Peel the eggplant and cut it into strips about 1/4 inch wide, from top to bottom. Brush it with olive oil and sprinkle with salt. Brown it quickly on a charcoal or gas grille, or on a baking sheet in a hot (400 degree) oven.
Eggplant pizza's taste good and are healthy. Take a single slice of eggplant, top it with pizza sauce, cheese, and the toppings of your choice. Bake it in the oven on 350 for 20 minutes. Enjoy:)

Eggplant Parmesan
Ingredients
1 medium eggplant
1 (6 ounce) can tomato paste
1 cup water
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon oregano
1 tablespoon basil
1 cup mozzarella cheese , shredded
3 tablespoons parmesan cheese
Peel eggplant; cut into 1/8" slices.
In a bowl combine tomato paste, water and tomatoes. Mix well. Add oregano and basil. Spread some on the bottom of a 2-quart casserole. Layer half of eggplant, more sauce, and half the mozzarella cheese. Repeat layers.
Finish by sprinkling Parmesan cheese on top. Cover casserole.
Place in microwave and cook on High 14 minutes, turning dish once after 7 minutes if your microwave does not rotate.
Serves 4.
To Freeze: Place servings in individual freezer containers; seal well, label, freeze up to 2 months.
To Thaw: Thaw and place in microwave on High for 7 minutes.
Have some for tonight and reserve the rest for sandwich tomorrow. You can also freeze the rest.
Cheesy Eggplant Bake
INGREDIENTS
1 medium eggplant, peeled
2 teaspoons salt
3/4 cup dry bread crumbs
3 teaspoons garlic salt
1/2 teaspoon pepper
3 eggs
3 tablespoons olive oil, divided
1 large green pepper, chopped
1 medium onion, chopped
1/2 pound fresh mushrooms, sliced
2 (14.5 ounce) cans stewed tomatoes
1 (6 ounce) package sliced mozzarella cheese
DIRECTIONS
Cut eggplant into 1/4-in.-thick slices. Place in a colander over a plate; sprinkle with salt. Let stand for 30 minutes. Rinse under cold water and pat dry with paper towels.
In a shallow bowl, combine the bread crumbs, garlic salt and pepper. In another shallow bowl, beat eggs. Dip eggplant into eggs, then coat with crumb mixture.
In a large skillet, cook eggplant in 2 tablespoons oil for 2 minutes on each side or until lightly browned. Transfer to an ungreased 13-in. x 9-in. x 2-in. baking dish. In the same skillet, saute the green pepper, onion and mushrooms in remaining oil for 5 minutes or until pepper and onion are crisp-tender. Sprinkle over eggplant. Top with tomatoes.
Bake, uncovered, at 350 degrees F for 25 minutes. Uncover; place cheese slices over the top. Bake 25-30 minutes longer or until cheese is lightly browned
slice it, roast it, then roll it up with cheese and sundried tomatoes and whatever you like, top with tomato sauce, cheese and some prosciutto to crisp up on top. Roast in the oven till cheese is melted. YUM!
There are several things you can do with an eggplant.
If you are looking for a more traditional use then:
peel the eggplant, slice it, use egg and milk wash to dip them in and then coat with Italian flavored bread crumbs, bake them in the oven until tender(some fry them I prefer baking), line a baking pan, with cooking spray, put a layer of tomato sauce, then a layer of eggplant, then a layer of mozzarella cheese, repeat the process. Cook approx. 20 minutes and it will be done.
Another way that I use eggplant is to coat it with olive oil, sprinkle some seasonings such as garlic and onion powder on it and grill it until tender.
Another way is to let it marinade in Italian dressing and the grill it.
