What can I make with yellow potatoes?!

yellow mashed potatoes! LOL j/k maybe you can fry them... i have ate fried sweet potatoes and they were good

You can do anything with yellow potatoes that you can do with russet. Just enjoy them! Mashed, fried, baked, potato salad, it doesn't matter.

I used it to make a twice baked potato (though I basically had to use 3 yellow potatoes and scoop out the inside to make the equivalent of a large russet). Almost tastes better than russet.

Potato bread

I assume you mean Yukon Gold. They can go either way. Their texture is about midway between Idaho or Russet baking potatoes and Red or New boiling potatoes. The former fall apart and become fluffy when baked, the later hold their shape better and have an almost waxy texure when boiled and cooled (which is nice for potato salad). You can fry any sort of potato.
