Tell me what cheeses are use in Macaroni n Cheese?!
Answers: I love making homemade Macaroni n Cheese. I usually just use cheddar cheese, and its boring. What cheeses and combinations do you use in your mac n cheese?
I have been making my famous mac and cheese from scratch for many years. It is a huge family hit. I don't have an exact recipe since I have been doing it so long, but this is mine
1 large pkg of the large elbow noodles and cook up in salted water til aldente and drain and put into a buttered casserole dish. Salt and pepper the noodles real well and mix in.
On the side I heat up my butter in a saucepan with some cornstarch and make a rouge. When it turns a light brown color I add my milk and bring to a boil. I like my sauce thicker. I do add some salt and pepper to my rouge.
The cheeses I grade and have ready on the side are
White Irish Cheddar Cheese
Sharp Cheddar Cheese
Colby Jack- Marbled cheese
An italian mix cheese- Parmesan, Asiago, Romano
Longhorn Cheddar Cheese
2 slices of American
I usually have these all shredded and in a large bowl ready to go. I put some in the rouge mixture to make a cheesy sauce. I pour this over the noodles and then mix in the rest of the cheeses and then add some more onto the top.
Cook in 425 degree oven until bubbly and brown on top. It is basically cooked so it just needs to heat thru.
If you would like some variety you can add some ham to it. I have also added those Rotel diced tomatoes that have diced green chilis in them for a kick.
This mac and cheese is even better after it has set for a bit and let cooled down and thicken up. This freezes nicely and can reheat in a ziplock bag.
You can also cut into squares and dip into an egg and flour mixture and deep fry for later. This is really good.
I have also been known to ocassionally mix it up and add cornflakes or crispy onions on top.
Best way to make this is just with the cheese. That is the most popular of mine.

I like provolone, sharp cheddar and asiago cheeses. And also try topping it with some grated Parmesan cheese! Mmm....Yummy!!
If i'm making more of a stove top style, I used just cheddar. It's got a lot of flavor.
If i'm making my Italian Mac and Cheese, I like to use a Mix of Mozzarella and Parmesan, and I bake it with more cheese on top, and the noodles and sauce mixed with Italian Sausage and fire roasted tomatoes.
I use only Velveeta to make mac and cheese. You can use Cheez Whiz as well, and there is a mexican flavor Cheez Whiz that would give it a little pizazz.
any you want really, every thing form cheddars, to colby, even alloute, cheese. i have seen blue cheese, brie and even parmesan cheese. but the one people are fimiliar with is the mix of cheddars. personal fav...jalepano jack cheese with little of cheddar
My mom makes a great swiss mac and cheese! Use big penne pasta, cook until al dente and set aside. In a small sauce pan mix two or three cans of Aunt Penny's white sauce with as much shredded swiss cheese as you want (you don't want to know how much my mom uses...). Mix until cheese melts. In a large baking dish, mix the pasta with the cheese. Cover with breadcrumbs, pads of butter and more shredded cheese. Broil in the oven until a nice crust forms. This is our best family recipe and everyone raves about it! She made it for my baby cousins 1st birthday and everyone including him were going for seconds.
Best of all, it has NO calories ;)
For a sharp, rich flavor i use sharp, dried and aged parmesean cheese. They sell it in the bags in the grocery stores with all the other chesses. Good luck!
You don't need to change your cheese you just need to add dry mustard, and a dash of Tabasco to your recipe. It will bring out the flavor of the cheese.
monterey pepper jack cheese can be mixed with the cheddar, and it comes out really yummy =)
but my mom goes for the traditional cheddar cheese approach...i had the pepper jack one at a restaurant =D

This combo works for me:
1. mozzarella cheese, 2 Swiss chees,3. Parmesan cheese, 4. provolone cheese and 5. ricotta cheese
INGREDIENTS
1 (16 ounce) package elbow macaroni
1 cup shredded mozzarella cheese
1 cup shredded Swiss cheese
1 cup grated Parmesan cheese
1 cup shredded provolone cheese
1/2 cup ricotta cheese
1/2 cup sour cream
1/2 cup heavy cream
1 tablespoon chopped fresh parsley
1/2 teaspoon dried Italian seasoning
1/2 teaspoon garlic salt
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, 6 to 8 minutes. Drain.
In a large bowl, toss together the mozzarella cheese, Swiss cheese, Parmesan cheese and Provolone cheese. Remove about 1/2 cup for topping and set aside. In a separate bowl, stir together the ricotta cheese, sour cream and heavy cream. Season with parsley, Italian seasoning and garlic salt.
Pour the ricotta cheese mixture and drained macaroni into the bowl with the cheeses and toss lightly. Do not mix too thoroughly, it's better left messy. Pour into the prepared baking dish. Sprinkle the reserved cheese over the top.
Bake in the preheated oven until cheese is melted, about 10 minutes, then turn the oven to broil. Broil for about 5 minutes to brown the top

I love macaroni with Swiss Cheese with salmon loaf or tuna patties. It;s just enough different to catch your interest.
