Fajitas!

Marinated Skirt Steak Fajitas
Recipe courtesy of Gourmet Magazine
Juice of one lime
2 tablespoons vegetable oil
2 garlic cloves
1/2 teaspoon ground cumin
1/2 jalapeno, seeded
1/4 cup cilantro leaves
1 pound trimmed skirt steak
Salt and freshly ground pepper
Twelve 7-inch flour tortillas, warmed
Accompaniments:
Salsa
Sour Cream
Sliced red onions
Lime wedges

In a food processor or blender combine the lime juice, oil, garlic, cumin, jalapeno and cilantro leaves and process until pureed. Alternatively, combine the lime juice and oil in a bowl. Finely chop together the garlic, cumin, jalapeno and cilantro and whisk into the juice and oil mixture. Pour the mixture over the steak and allow to marinate for 30 minutes.
Preheat charcoal grill or stovetop grill pan. Season the steak with salt and pepper. Grill the steak for 2 to 3 minutes per side or until cooked to desired degree of doneness. Transfer the steak to a cutting surface and allow to stand for 5 to 8 minutes. Cut steak across the grain into thin slices or chop into 1/2-inch pieces. Serve immediately with warm tortillas and accompaniments.

What about some baked bbq chicken. Your sides could be many things, green beans, baked potatoes, loaded potato casserole, mac and cheese....

I have the best recipie! I just tried it out last night and it was a hit!

Roast beef and bacon roll-ups.

-3 large tortillas (I found cheddar and jalepeno tortillas at the store and they were even better. But you can use regulart tortillas)
-6 pieces of bacon. Cooked crisply and then crumbled up. Don't use bacon bits...the flavor isn't as good.
-4oz of blue cheese crumbles
-8oz cream cheese.
-1/4 tsp pepper
-1tsp ground mustard (optional)
-1/4 cup milk
-1lb sliced roast beef (I don't think I used that much though.) And I just bought the pre packaged kind too.
-2 tomatoes sliced
-lettuce leaves

Cook the bacon to a good crisp. Then crumble it up.

Next, take a bowl and mix together the cream cheese, blue cheese crumbles, bacon, milk, pepper, and mustard.

Spread the mixture onto on tortilla. Then cover the mixture with the roast beef slices. Add tomatoes and then lettuce.

Roll it up into a burito and cut it into thirds.

Now repeat with the remaining tortillas.

makes 9 roll-ups!

Smear pork chops with brown spicy mustard then flour them, brown in frying pan in oil. When done, put in a baking dish and pour a can of Cream of Mushroom Soup over the top, cover and bake in the oven for at least 30 minutes - serve with rice or potatoes.

Chicken Italianio (easier than it looks)

3 lbs chicken breasts, cut up
3-6 tbsp salad oil
12 garlic cloves
1/2 cup dry white wine
2 tsp salt
1/2 tsp pepper
1/2 tsp dried rosemary leaves
1 medium-sized onion, sliced
4 medium-sized tomatores, cute into wedges
1 8 oz pkg spaghetti

In 12-inch skillet over medium-high heat, in hot salad oil, cook chicken and garlic until golden brown on all sides, about 20-25 minutes. When done, add wine, salt, pepper, rosemary, onion and half the tomato wedges; over high heat, heat to boiling. Reduce heat to low; cover and simmer 15 minutes or until chicken is fork-tender. Skim fat from liquid in skillet (if there is any). Add remaining tomatores; heat through. While this is simmering, prepare spaghetti as label direct.

To serve, drain spaghetti; place on large platter. Spoon chicken mixture on top of spaghetti.

Asparagus Au Gratin

2 tbsp butter
1/4 cups fresh bread crumbs
1/4 tsp sage, crushed
2 tbsp sliced green onion
1 can (10 1/2 oz) Asparagus, drained
1/4 cup of shredded Swiss Cheese

In 8x8 inch ovenproof dish, melt butter. Stir in crumbs and sage, mix well. Bake at 400 degress for 6 minutes. Remove from oven. Stir in onion, remove from dish. Arrange asparagus in buttered 1-quart baking dish. Sprinkle cheese over asparagus. Top with crumb mixture. Bake for 400 degrees for 10 minutes or until cheese melts.

brown one pound hamburger meat in a skillet. add 3 cups water and 2 cups noodles. when noodles are tender add one can cream of mushroom soup and 8oz Velveeta cheese stir until cheese has melted and serve. this is a great recipe and uses things you are likely to have on hand
