Does anyone have a recipe for meatloaf in a muffin pan?!

Just make your normal meatloaf mix and scoop it into the muffin pan. Bake until done.

I don't follow a recipe for meatloaf, I just mix my ground beef and ground sausage with an egg, some seasoned bread crumbs, some Worchestire sauce, some ketchup, salt and pepper, mix it all together well, shape into a loaf and put it in a great big pan (who needs a loaf pan) but you can easily just use a muffin pan. Right before it's done, add some ketchup and shredded cheddar on top.

For a twist, go western and use brown sugar and BBQ sauce instead of the ketchup.

For Italian use pizza sauce and mozzarella cheese instead of ketchup...when I do this I spread the meat mixture into a large rectangle (I added in Italian seasoning to the meat also) on the rectangle spread pizza sauce and mozzarella, roll up and into a pan,

It will react the same way, usually meat loaf shrinks a bit, so just put a nice healthy scoop in depends on big or small you want them. I would just assume however big of a scoop you put in will shrink up a bit, so base it on that.

I really doesn't matter what type of pan you have but the silicone ones ned to be placed on another pan to give it more stability and prevent dropping it when taking it out. You can mix you meat loaf as usual, cubed some potatoes and carrots and spoon about 2TBSP of the veggies into the muffin tin and fill to the top with meat loaf mixture, pressing to the pan surface. Bake covered at 350 for about 20 minutes.
I take about 3 pounds of lean ground beef
1 large diced onion
1 12 ounce can of V-8 juice or tomato juice
1/8 cup of worchestshire sauce
1/8 cup of mustard
1/4 cup ketchup
1-2 TBSP liquid smok
1/2 TBSP ground pepper
4 cloves smashed and minced garlic/1 TBSP powdered
I mix all in a large bowl until combined. I don't use eggs so I never have to worry whether it is well done or medium.
