mix the following ingredients to make a sweet soy sauce for 2 cod fillets:
3 tablespoons soy sauce
3 tablespoons mirin (or 2 tablespoons honey or sugar)
2 tablespoons vinegar (preferably black Chinese vinegar)
2 tablespoons sesame oil

place cod fillets on foil, add a thin slice of ginger to each fillet, then pour liquid mixture on top. steam for 15 mins or until cod firm and no longer translucent. serve on top of mesclun greens (optional).

Yes. I would lay the cod on foil, squeeze a little lemon juice on it and maybe a little white wine, a few turns of pepper and salt, wrap in a parcel, put in the top tray of the steamer and steam for about 20 min's. If it's not quite done give another 5 min's. Enjoy!

Use parchment paper.
I would suggest about 5-8 minutes depending on the thickness of the fillets.
They should be a nice white colour when cooked.

my steamer is great for fish - i lay it on baking paper. as for flavour im not sure about cod but if i was salmon i would use fresh lime and chilli.
