Recipe for scones?!


Question: i am looking for a good recipe for scones that is healthy...low fat and calorie...but taste good. is that even possible? if it is then can you please share one?

Low-Fat Breakfast Scones

1/2 cup non-fat vanilla yogurt
1/2 cup non-fat sour cream
1 tsp vanilla extract
1 tsp lemon juice
2 cups flour
1/4 cup + 3 tsp granulated sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
3-4 Tbsp chilled low fat margarine
Wisk together the yogurt, sour cream, lemon juice and vanilla. Set aside.

Preheat oven to 400 Deg.
Prepare baking sheet by sparying lightly with vegetable oil.

In a large bowl:
Combine the flour, sugar, baking powder, soda and salt.
Cut in the margarine until the mixture resembles course meal.
Cut and fold the yogurt/sour cream mixture into the flour until you can collect the dough.

Knead the dough on a lightly floured surface just until it can be shaped. DO NOT OVERWORK THE DOUGH, the scones will be tough. The dough should be light and moist.
Place the dough on the baking sheet.

Dust the top of the dough with 1 tsp sugar and pat the dough into an 8"-10" round. Cut "to," not "through" the dough to mark 12 wedges.
Dust the scones with 2 tsp sugar before baking.
Bake the scones 20 minutes at 400 Deg.
Serve promptly with fruit jam or honey.

You can add fillers (raisins, fruit pieces, etc.) or press nuts (almonds, pecans, etc.) onto the top before baking. A family favorite!

SCONES

2 cups sifted flour

2 teaspoon cream tartar
1 egg
1/2 cup milk
2 tablespoon sugar
2 tablespoon butter

Combine dry ingredients in a small bowl or on a piece of waxed paper for easy pouring.
Cream together butter and sugar. Add egg, alternating with mixed dry ingredients with milk.

Bake at 450°F 15 minutes.

This is for a plain scone, to have with butter and jam.
You could add raisins, sultanas or chunks of dates.

This one dosen't sound too bad....

Ginger and Almond Scones

Summary:

You can double or triple this single recipe, which makes 8 to 10 scones, but don't push it beyond tripling. After that, it takes too long to combine the dry ingredients with the milk or cream, and you risk overmixing.

Serve plain or with jam or lemon curd.


Makes 8 to 10 scones

Ingredients:
1 1/4 cups flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
2 tablespoons sugar
1/2 teaspoon ground ginger
1 teaspoon finely chopped crystalized ginger
1/2 stick (2 ounces) chilled unsalted butter, cut into bits
1/2 cup sliced blanched almonds
1/4 teaspoon almond extract
1/2 cup milk (may substitute heavy cream)
Directions:

Position a rack in the middle of the oven. Preheat the oven to 350 degrees. Lightly grease a baking sheet or line with parchment paper and set aside.

In the large bowl of a standing electric mixer, combine the flour, salt, baking soda, baking powder and sugar. Stir in the ground and crystallized ginger.

In the same bowl, using a standing electric mixer on medium speed, add the bits of butter to the flour mixture. Mix until the butter is evenly combined with the flour and the mixture feels like coarse cornmeal.

Add the almonds, the almond extract and then the milk or cream, combining just until the dough forms. Be careful not to overmix.

Turn out the dough onto a surface dusted with flour or sugar, and pat it into a 6-inch square, about 1/2 inch thick. Cut into triangles with a knife and transfer them to the prepared baking sheet, separating them by at least 1/2 inch. Bake for 20 minutes. Serve warm.
