I was going to stuff my flounder with canned crab meat, will that work?!
Answers: This is the first time I am attempting to make my own stuff flounder. I always order it dining out. Any helpful input would be appreciated.
Canned crab meat, Panko crumbs, milk, egg, sweet-hot red chili sauce, finely diced red onion, black pepper and garlic salt, mayonaise and a bit of lemon juice. Should be the consistancy of medium thickness oatmeal- Add more milk to achieve this. If you reatain the crab juice from the can, eliminate the salt, use less milk-this will add more crab flavor. You can add a 1 teaspoon of dried tarragon if you wish.
During the first half of the cooking process, cover with aluminum foil to keep moist, remove the foil at half-time and allow to brown.
mix the crabmeat with an egg and some fresh breadcrumbs and flavourings first. That way it wont be dry and the stuffing will be bound together.
sure you can use canned crab. i usually mix mine with dijon mustard, wirshershire, egg and a dash of hotsauce.
Pick thru the crab for shells. (I guarantee, you WILL find at least one!) Gently toss together bread crumbs, S&P, a bit of melted butter, a bit of lemon juice (+ lemon zest if you have a fresh lemon), maybe a dash of Old Bay seasonoing.....THEN gently toss in your crab. THEN stuff the flounder.
This was one of my signature dishes a few years ago(Flounder Del Ray) take 1lb crab meat, 2 cups sour cream, 2tbs minced garlic, 1 bushel of fresh minced parsley, and 2 shallots finely diced with 1 egg. Combine all ingredients once together add Panko to firm the crab mixture. Then stuff flounder.
The cavity in a flounder is awfully small unless it is a huge flounder.
The ones I get are about 1/2lb.
I normally use a wedge of lemon.

Sure you can. Lumb crab would be the best choice of the canned crabmeat. Drain it and be gentle with the Lump crab because it can all fall apart and you won't have nice chunks. You need a bit of a binder to moisten it and keep it together. You can use a little bit of mayo, maybe a pinchnof breadcrumbs and add a squeeze of lemon juice, salt and pepper. You an also add a few tablespoons of finely chopped red peppers and onions, fresh or dried parsley and a touch of dill.
Yeah that would be good or the fake crab is good too.
