Peppermint Patty Cake

Ingredients
Cake
3 ounces semisweet chocolate , chopped
6 small chocolate-covered mint candies , such as peppermint patties,coarsely chopped
2 tablespoons milk
4 cups cake flour
1 tablespoon baking powder
1 teaspoon salt
2 cups butter , at room temp
2 3/4 cups sugar
5 eggs
1 1/2 teaspoons vanilla extract
2/3 cup milk
Glaze
9 ounces semisweet chocolate , chopped
6 tablespoons butter
to taste additional chocolate-covered mint candies , cut into pieces,optional

Directions
1Cake: Preheat oven to 350; grease& flour 12 cup Bundt pan In microwave safe bowl combine chocolate, peppermint candies and milk; heat on hi at 20 sec intervals, stirring occasionally, until melted; reserve Combine flour, baking pwdr and salt; at hi speed beat butter with sugar until fluffy, reduce speed to med, beat in eggs 1 at a time and vanilla until combined; alternately beat in flour mixture and milk; beat 1 minute Trnasfer 1 cup batter to bowl; stir in reserve melted chocolate mixture; pour 5 cups plain batter into pan; drop half of chocolate batter over batter in pan Swirl knife thru batters to marble Add remaining plain& choc.

I found a mint cheesecake that involves using york peppermint patties.

No Bake Chocolate Mint Cheesecake

1/4 cup butter or margarine, melted
1 cup chocolate wafer crumbs (10 wafers)
20 miniature or 5 large York Peppermint Patties
2 tablespoons butter
16 ounces cream cheese
1 (14 ounce) can sweetened condensed milk
1 tablespoon unflavored gelatine
2 tablespoons lemon juice
1 tablespoon vanilla extract
1 cup whipping cream
1 cup sour cream
8 miniature or 2 large York Peppermint Patties, grated*

* Grate while frozen.

Mix melted butter and chocolate wafer crumbs. Firmly pat over bottom of 9-inch springform pan. Chill.

Melt 20 miniature York Peppermint Patties or 5 large York Peppermint Patties and butter. Drizzle over crumb crust. Chill.

Beat cream cheese until light and fluffy. Gradually add sweetened condensed milk while beating until smooth.

Soften gelatine in lemon juice and warm to dissolve.

Add to cheese mixture with vanilla extract.

Whip cream until stiff peaks form.

Fold into cream cheese mixture. Pour into prepared pan. Chill.

Cover with whipped sour cream. Garnish with grated York Peppermint Patties. Chill several hours before serving.

I make york brownies. The recipe is below. Be sure they are spaced fther apart int he center than on the outsides so the center is not too gooey. For a shortcut version, you can use boxed brownie mix for a 9 x 13 size pan.

PEPPERMINT BROWNIES
3 sticks butter, melted
3 cups sugar
1 Tablespoon vanilla
5 eggs
2 cups flour
1 cup cocoa
1 teaspoon salt
1 teaspoon baking powder
24 miniature York Peppermint Patties

Preheat oven to 350 degrees. Grease a 9x13 baking dish and set aside.

In a large bowl, mix together butter, sugar and vanilla. Add eggs one at a time, stirring well. Stir in the flour, cocoa, baking powder and salt. Spoon all but 2 cups of mixture into prepared pan. Place York Patties on top of the batter (spacing about ? to ? inch apart). Spread remaining batter over candies. Bake 50 minutes or until brownie pulls away from the sides of the pan. Cool completely in pan then cut into squares.

Note: A knife will not come out clean because of the melted patties.

For super easy, make brownies according to directions. After removing from oven cover the top with mints. Put back in oven for about one minute. After removing from oven, wait about 5 minutes & when mints have melted, swirl lightly with a knife. Let cool & enjoy.
