Here are some of my favorites:

This is to die for chicken pot pie. I got it from one of my answers friends...obviously, take out the onions but I always add the spices:

Chicken Pot Pie

1 cup chopped onions
1 cup chopped celery
1 1/2 cups diced potatoes
1 (16 ounce) bag frozen mixed vegetables, thawed
1/2 cup margarine or butter
1/2 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half
1 teaspoon salt
1/4 teaspoon pepper
4 cups chopped cooked chicken
2 (15 ounce) packages refrigerated pie crusts

Saute potato in margarine for 5 minutes in a dutch oven. Add onion, celery and thawed frozen vegetables. Saute for another 10 minutes. Add flour gradually to the sauteed mixture, stirring constantly for one minute.
Allow refrigerated pie crust to come to room temperature. Meanwhile, combine half and half and chicken broth. Gradually stir into the vegetable mixture. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Add chopped chicken, stirring well. Add additional salt and pepper to taste.
Preheat oven to 400°.
Spray nonstick spray into a 9 X 12 casserole. Place pie crust on the bottom of the pan to cover, cutting to fit. Pour chicken/vegetable mixture over the pie crust, then top with the remaining pie crust. Cut vents into the top crust.
Bake for 40 minutes or until crust is golden brown. Enjoy!

You can add a bit of sage and poultry seansoning if you liked it more spiced....I do for at home,,,but when I take it somewhre,,,,I leave them out...some people can't eat spicy.....I will sometimes add a little parsley, and thyme....instaed of the sage and poultry seasoning....just for a change....

Something a little fancy: take out the shallots...

Balsamic Chicken.
4 chicken breasts (prefer on the bone)
2 Tablespoons Extra Virgin Olive Oil
1/4 Balsamic vinegar (a little more if you like tangy chicken)
Juice of a whole lemon
1 Tablespoon Dijon Mustard (NOT YELLOW!)
2 chopped shallots
2 chopped gloves of garlic (more if you like it garlicky)
Dash of salt and pepper.
Whisk together and pour over chicken in glass dish. Cover and put in fridge for up to 2 hours.
Place chicken in baking dish and pour remaining marinade over breasts.
Cook UNCOVERED in 400 degree oven for 50-60 minutes.
Serve with mashed potatoes and pour remaining juice over them.

Chicken Parmesan
4 boneless skinless chicken breast halves
salt and pepper
1/2 cup Italian breadcrumbs
1 egg, beaten
4 teaspoons butter
2 cups spaghetti sauce
4 slices mozzarella cheese
1 teaspoon grated parmesan cheese
--Pound chicken to flatten. Salt and pepper the chicken to taste. Dip chicken in egg; then coat in bread crumbs. Melt butter in skillet over medium-high heat and cook chicken, turning and browning for 10 min or until chicken is done. Remove from skillet. Add spaghetti sauce to skillet. Heat sauce through and then add chicken. Place slices of mozzarella on top of chicken. Sprinkle with parmesan cheese. Cover skillet and heat until cheese is melted. Serve with a side of spaghetti if desired.

A really great crock pot recipe:

Chicken Parisienne
6 chicken breasts
Salt and pepper
Paprika
1 can cream of mushroom soup
1 small can sliced mushrooms
1 cup sour cream
? cup water

Sprinkle chicken with salt, pepper, and paprika. Place in crockpot. Mix soup, water, mushrooms, and sour cream. Pour on chicken breasts. Sprinkle with paprika. Cover and cook low for 6-8 hours. Serve over rice or noodles.

I love pasta. Here is a great pasta recipe with chicken:

Chicken Scampi
1/2 cup butter
1/4 cup olive oil
1 tsp dried parsley
1 tsp dried basil
1/4 tsp dried oregano
3 cloves garlic, minced
3/4 tsp salt
1 Tbsp lemon juice
4 boneless, skinless chicken breast halves, sliced lengthwise into thirds

In a skillet heat the butter and olive oil on medium high heat until butter is melted. Add parsley, basil, oregano, garlic and salt and mix together. Stir in lemon juice.
Then add chicken pieces and saute for 3 minutes or until white. Lower the heat and cook for about 10-15 mintues or until chicken is cooked through. More butter can be added if needed. Serve chicken over hot angel hair, or other pasta and pour some of the sauce over it all.


A great side for any of the above:

Caesar Coleslaw

1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing

Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!

you can fried ie with green peppers, mushrooms and carrots, with some soy sauce and olive oil, like a stir fry

INGREDIENTS
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

OVEN FRIED CHICKEN

1 tbsp. butter
2/3 c. Bisquick
1 1/2 tsp. paprika
1 1/4 tsp. salt
1/4 tsp. pepper
1 cut up frying chicken

Melt butter in rectangular pan 13 x 9 x 2, in oven. Mix Bisquick, paprika, salt and pepper. Coat chicken. Place skin sides down in pan. Bake 35 minutes. Turn chicken, bake about 15 minutes or until done.

If you can bone it out...seasoning it and frying it in a grill pan (no oil) for 20 minutes on each side without touching it will make an incredible chicken!

A good and easy recipe for chicken (with no onions) is Brown Sugar Chicken. It is kind of like a teriyaki style and is super easy to make.

Mexican Chicken

Ingredients:
3 Boneless, skinless chicken breasts
2 cans chili-ready tomatoes
1 can corn, drained
1 can black or pinto beans, rinsed and drained
1-2 cups shredded cheese (such as cheddar or monterey jack)Cooked rice or cooked elbow macaroni

Method
Cut chicken into one-inch cubes; season to taste with salt and pepper. Cook in a tightly-covered non-stick skillet until done. Add tomatoes, corn & beans; heat through. If you are using the macaroni, add it and heat everything through again. Just before serving, sprinkling with the cheese and serve hot. If you are using the rice, spoon chicken and vegetables over the rice and sprinkle generously with the cheese before serving.


Garlic Lemon Chicken with Linguini

Ingredients:
Juice and finely shredded peel of 1 lemon
4 garlic cloves, minced
1 tbsp dried basil
Salt and pepper, to taste
4 skinless, boneless chicken breast halves
1/4 cup olive oil
2 cup heavy whipping cream
4 cups hot, cooked linguini
Chopped fresh parsley

Method
In a bowl combine lemon juice and peel, garlic, basil, salt, pepper, and half of the olive oil; add chicken breasts. Cover and marinate in refrigerator about an hour. Remove chicken; discard marinade. Heat remaining oil in large skillet and cook chicken breasts about 5 minutes on each side. Once cooked, remove and set aside. To the same pan add cream. Heat and whisk to scrape up browned bits in bottom of skillet; let simmer about 5 min. Cut chicken into thin slices; return to pan. Add cooked linguini; toss to mix. Transfer to serving plate and sprinkle with parsley to garnish.

This is my favourite chicken, and is so quick and simple:

500g chicken breast, sliced
2 cloves garlic
1 cup mushrooms, chopped
1 cup semi-dried tomatoes, chopped
1/2 cup red or green capsicum/pepper, chopped
1 tub light cream
cooked fettucine

Brown chicken breast in pan, add garlic, mushrooms, tomatoes, peppers and cook until soft. stir through cream and simmer for 2 mins, then serve with fettucine.

Obviously you can add or take whatever vegetables you like, but the semi-dried tomatoes give the sauce the lovely flavour

Chx Breast
Spreadable flavored cheese (garlic/herb really good) or can use cream cheese
tomatoe, thinly sliced
basil and/or spinach leaves
2 tblsp. olive oil

-pound out chx breast starting in the center and moving outwards, so not to break up the chx. Easier clean up if put in between 2 sheets of plastic wrap. Once chicken is about .5 to .75 thin, spread cheese over whole breast then a layer of tomatoes and basil/spinach leaves. Tightly roll up chx. In a pre-heated skillet pan, pour olive oil and put the seem side of the chx roll down. Brown all four sides put make sure seal the seem first. Finish chx in pre-heated 375 degree oven. Usually, takes appx. 8-10 minutes for chx to cook all the way through, cheese to melt, and tomatoes to warm.

Can also bread the raw chx roll with italian bread crumbs before pan frying to get even more texture. Dip raw roll into a pan of flour, then dip in a pan of egg batter, and roll in italian bread crumbs. Pan fry, finish in the oven, and enjoy.

CHICKEN TETRAZZINI

1 can (4 oz.) sliced mushrooms, drained
2 tbsp. chopped green pepper
2 tbsp. butter
1 can (2 c.) chicken gravy
1/2 c. shredded cheddar cheese
1 c. diced cooked chicken
2 c. cooked spaghetti
1/4 c. chopped tomato

In saucepan, brown mushrooms and cook green pepper in butter until tender.

Stir in gravy and cheese; heat until cheese melts. Add chicken, spaghetti, and tomato.

Heat; stir now and then.

4 servings

This is something i threw together with just stuff i had at home and my kids loved it.

3-4 Boneless Chicken Breast (evenly cubed)
1 Box Rice Roni Fried Rice
1 Bag of Microwave Broccoli
1/2 cup Fresh Shredded Parm. Cheese
Shredded Colby/jack Cheese
1 clove garlic

Cube Chicken ( I always cube my chicken while it is partially frozen-almost thawed but not quite...this makes it so much easier to cube). Season cubed chicken with salt and pepper and then cook chicken in a skillet with couple tablespoons of canola oil on medium heat until done. Set aside. In a separate pan cook rice a roni as directed and adding garlic. A couple minutes before done add cooked chicken to rice. Cook broccoli in microwave as directed and add to rice and chicken mixture.Add bought 1/2 cup fresh grated parm. cheese. After serving on plate sprinkle with shredded Colby/jack cheese. Serve with fave bread and salad if desired.
