My wife is gone and now its just me and my 11 year old son. Every time I cook there is a lot of leftovers and?!
Answers: we get tired of eating leftovers every other day. I mostly get hamburger helpers and homestyle bakes meals. I need ideas thanks
Remember, your freezer is your friend! Make extra and freeze leftovers in individual portions, and defrost as needed.
Get a grill. You can grill chicken, burgers, sausages and hot dogs. Make a big pot of chili or soup. Invest in a crock pot. You can make great meals in it, and not have to worry about cooking up something in a hurry. Stay away from pre-packaged, processed foods (they are not healthy). Eat salads with grilled chicken. Make quesadillas or tacos (extra taco meat can be frozen). Don't forget to include lots of fresh veggies and fruit.
You could freeze leftovers, then you're not forced to eat them right away-great alternative to frozen dinners from the store. You could try cutting a recipe in half-just put in half the ingredients and make sure to adjust cooking times accordingly.
being a single man for 20 yrs i cook up 2-3 different casseroles and put them in indivudal servings and freeze them.
i can alternate and get along pretty well.
Freeze leftovers so that you don't have to eat them directly the day after you had it already. You can also donate leftovers to a local church that will provide you with little plate like things to put the food in and then they donate it.
Or, you can start cooking smaller portions.. If you're cooking pork chops, cook only two and use a packet of mashed potatoes so that you don't make too much.
Hamburger helper isn't healthy and you can make your own anyway. Cut your ingredients in half. Buy a cookbook "Cooking for 2" at Wal Mart. Better yet, find a nice woman to cook for you-lol.

Chicken linguinie, fry diced chicken, garlic, salt, & pepper, in light olive oil - serve over linguini
how about steak, chicken, or pork chop, you can just put a little olive oil in a skillet and cook it on both sides. you can cook one each. bake 2 potatoes in the microwave. in the frozen veggie ilea at the grocery store you can find single packs of steam-able veggies that are very good. you just put the bag in the microwave.
When you have leftovers, put them in a freezer container and freeze them. You can have a meal out of that in a week or so and it won't seem like you're eating leftovers. I live alone and I often make a big pot of chili or goulash or spaghetti and freeze the leftovers for later. I don't get tired of them that way.
You can make several hamburgers and when they're cool, freeze them. Then you can have burgers and chips anytime...just heat them in the microwave.
most meats come in family packs. buy a family pack of meat (chicken thighs, etc), and break up the packs, put them in your freezer in zip lock bags, label them with the contents and date. Also, canned vegetables also come in small cans now, as well as bags of frozen vegetables. There are a lot of good basic "how to cook" cookbooks out there too. I'm no Emeril, but I am a 55 year old guy who is very much at home in the kitchen. If you need advice or suggestions, please feel free to email me. Also, if he's 11, it really isn't too soon to let him help in the kitchen either. That would be more time you two guys could spend together, and it is quality time. if u have leftovers u cound put it in the freezer and then heat it up and u dont have to wast ur time buying food then after u finished the leftovers or if u guys dont like it then feed it to the poors to eat.so i think my idea is good and is ur best.
There are just two of us and I cook in the crock pot quite a bit and use things like boneless skinless chicken breasts and cook some ahead like four at a time and keep the extra ones in the fridge for later in the week and have different side dishes with them~
