Ihop Buttermilk Pancakes

Ingredients
1 1/4 cups all-purpose flour
1 egg
1 1/4 cups buttermilk
1/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup cooking oil
1 pinch salt
Directions
1Preheat a skillet over medium heat.
2Mix all of the ingredients til combined.
3Melt a little bit of butter in the pan.
4Pour the batter by spoonfuls into the hot pan, forming 5-inch circles.
5When the edges appear to harden, flip the pancakes.
6They should be golden brown.
7Cook the pancakes on the other side until they are also golden brown.
8Enjoy.
I like buttermilk pancakes best. You can buy dried buttermilk powder in the baking aisle of the store - the recipe on the back of the can is good. I use whole-wheat pastry flour instead of white flour, and I usually add fresh or frozen blueberries.
Pancakes from the box...the ones where you just add water. Im not the best cook and they always turn out really good. I usually add chocolate chips or blueberries into the mix. Tastes yummy! For the kids I have added some food coloring and it makes it a fun breakfast, although not the most appealing to adults!
Buttermilk Pancakes
Start to Finish: 25 minutes
Ingredients
1-3/4 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, slightly beaten
1-1/2 cups buttermilk or sour milk (see tip)
3 tablespoons cooking oil
Desired fruit options (optional)*
Desired syrup (optional)
Directions
1. In a large bowl stir together flour, sugar, baking powder, baking soda, and salt. In another bowl use a fork to combine egg, buttermilk, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy). If desired, stir in desired fruit.
2. For standard-size pancakes, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet, spreading batter if necessary. For dollar-size pancakes, use about 1 tablespoon batter. Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm. If desired, top with syrup. Makes 12 standard-size pancakes or 40 dollar-size pancakes.
3. *Fruit Options: Stir one of the following fruits into the pancake batter: 1/2 cup chopped fresh apple, apricot, peach, nectarine, or pear; 1/2 cup fresh or frozen blueberries; or 1/4 cup chopped dried apple, pear, apricot, raisins, currants, dates, cranberries, blueberries, cherries, or mixed fruit.
4. Pancakes: Prepare Buttermilk Pancakes as above, except substitute milk for buttermilk, increase baking powder to 1 tablespoon, and omit the baking soda.
5. Whole Wheat Pancakes: Prepare Buttermilk Pancakes as above, except substitute whole wheat flour for the all-purpose flour and packed brown sugar for the granulated sugar.
6. Buckwheat Pancakes: Prepare Buttermilk Pancakes as above, except use 3/4 cup all-purpose flour and add 1 cup buckwheat flour.
7. Cornmeal Pancakes: Prepare Buttermilk Pancakes as above, except use 1-1/4 cups all-purpose flour and add 1/2 cup cornmeal.
8. Bran Pancakes: Prepare Buttermilk Pancakes as above, except use 1-1/2 cups all-purpose flour and add 1/4 cup oat bran, wheat bran, or toasted wheat germ.
I love these!! I especially like em with fried apples
German Breakfast Pancakes
6 Eggs
1/8 ts Salt
1 c Flour; unsifted
12 c Milk
1 ts Sugar
1/4 lb Butter; melted
- Powdered Sugar
Instructions:
Preheat oven to 450 degrees. Lightly beat eggs with salt. Gradually add
flour to milk, blending until smooth. Add this mixture and the sugar to the
eggs and blend well. Pour the melted butter into 2 - 8" square baking pans.
Add half the batter to each pan and bake for 15 minutes, or until the
pancakes rise and puff and are lightly browned.
Lower the temperature to 400 degrees if pancakes are browning too fast.
Sprinkle with powdered sugar and serve immediately with one or more of
the toppings suggested below.
Topping Suggestions: Fruit jam, fresh berries, sliced fresh fruit, sour
cream, applesauce, sugar and cinnamon.
