cut your potatoes in chucks and boil until done. then drain then and do not mash. put in bowl. add dill or sweet relish. diced onion. chopped boiled eggs, 1 tbsp. mustard and mayo or salad dressing. salt and pepper to taste. on the ingredients, you put how much you want according to how big of the potatoe salad you want. i always put alot in mine because i don't want to just taste potatoe. good luck

Chop potatoes into cubes and cook until soft but not too soft.
Mix together mayonnaise, chopped onions and a small amount of garlic, pepper and salt.
Mix all together and eat!
I like it whilst it is still warm.

I just cook the potatoes, cut them into bite sized pieces. Cool and toss with chopped green onions, sliced olives, Hellman's Real Mayo with olive oil, 2 chopped hard boiled eggs, chopped fresh celery. Mix well and sprinkle paprika on top. You can't go wrong with this simple old recipe. Leave out the olives if you don't like them.

hiya i use little new potatoes. expensive ones are best like anya ones. boil them up, having cut them in half, while hot add some soft cheese like philadelphia, i like the one with the chives in it best, mix it in, add some mayo and cool, add a few chopped fresh mint leaves and mmmmm!

I have found that Ky. Fried Chicken and the deli at our grocery store both make delicious potato salad.

But if you wish to make your own, here are several recipes to choose from:

The perfect potato salad is the one you personally enjoy the most.

I cook the potatoes, dice them, add salt and freshly ground pepper, chopped chives, and plain yoghurt. I sometimes add some chopped onion, or different herbs, parsley, mint, basil or celery leaf. Probably not to everyone's taste, but that's the way I like it, so it's perfect for me.

I think a lot of people use mayonnaise, but I go for the healthier option with yoghurt.

Dice slices of potatoes into small squares; part cook;add peas;complete cooking;drain;then add mayonnaise

Cube potatoes, add mayo, hard boiled egg chunks, bacon bits, chopped onion, and it's the best.

Potato salad

Serves 4-6

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients
2 tbsp walnut pieces (optional)
1 tbsp tarragon or cider vinegar
2 tsp Dijon mustard
2 tbsp olive oil
2 tbsp walnut oil
1 tsp honey
flaked sea salt and freshly ground black pepper
900g/2lb new potatoes, such as Jersey Royals or Charlotte, washed or scrubbed
1 tbsp chopped fresh tarragon leaves
1 large shallot, finely chopped
2 tbsp chopped cornichons or gherkins (optional)

Method
1. If you're using the walnuts, place in a hot oven (about 200C/400F/Gas 6) for a few minutes until beginning to colour slightly. This gives a fresher, less bitter flavour to the nuts.
2. Place the vinegar, mustard, oils, honey and salt and pepper in a screw-top jar or in the bowl of a small hand blender. Shake or blend well until creamy. Add more seasoning if preferred.
3. Cook the potatoes in boiling salted water for about 15-20 minutes until just tender. Drain well and, when just cool enough to handle, cut into halves or quarters, if quite large.
4. Place the potatoes in a mixing bowl with the tarragon, shallots, cornichons or gherkins and walnuts, if using, and toss in as much or as little of the dressing as you want. Serve just warm or, if you're not eating straight away, refrigerate and return the salad to room temperature before eating.

so far everyone has forgotten to tell you that you have to add a small amount of vinegar for it to taste normal. only a couple teaspoons any kind you like will work but i use apple cider vinegar
