The secret to a great casserole is the liquid that you use to bring it all together. Too much and it's like a soup. Too little and it's too dry, plus, the flavors don't blend together as they should...

Dang Good Potatoes

350° oven for 1? hours
9” x 13” lightly greased pan

2 pounds frozen hash browns
1 can of cream of chicken soup
16 ounces of sour cream
2 cups of corn flakes
1 cup of grated cheddar cheese
1/2 cup of butter
1/4 cup of butter - melted
1/3 cup of chopped onion
1 teaspoon of salt

Options:
diced ham
asparagus pieces (if using canned, drain the juice out)
Both of them together in the casserole are very good and make a complete meal.

Mix together the hash browns, soup, sour cream, onion, salt, and the 1/4 cup of butter. Spoon the mixture into the pan and sprinkle the cheese on top. Mix the 1/4 cup of butter with the corn flakes and sprinkle them on the cheese before baking.

Enjoy!

Don't forget the topping - depending on what you make, you can finish it off w/ a nice layer of cheese that gets gooey & crusty around the edges... or a breadcrumb topping that gets golden brown.
