How do you make a real cheese sauce?!


Question: I am making asparagus. Normally I steam it, and then melt together velveta cheese spread with butter and pour it over the top. Since we are eating all organic now, does anyone know how to melt real cheese and make it have the same saucy consistency as veveta spread has when it's melted.

For a full fat version: in a saucepan melt butter then add enough flour to make a creamy rue. Cook for 1 minute but be careful not to burn. Add milk in a little at a time until a nice somewhat runny consistency is achieved. Add as much grated cheese as you want to make it yummy.

The low fat version: in a saucepan add 1 cup milk and 2 Tab cornstarch or flour and dash of mustard and salt and pepper. Stir until thickened and add 1 c. grated cheese. Yummier!

1/2 cup olive oil
2 cloves garlic,minced
1 small onion,minced
1 wedge of cheese
heat oil and garlic,add onion cook over med. heat until onions are transparent. lower heat and break up cheese.add pieces slowly, until sauce is smooth

Milk, butter, corn starch and cheese.

VEGGIE CHEESE SAUCE

1 tbsp butter
1 tbsp butter substitute
1 tbsp flour
milk
3/4 cup grated cheese
salt and pepper

Melt butter & butter substitute in pot on about heat of 7. Add in flour. Stir with whisk. Gradually add milk. Stir until mixture starts to thicken. Add in cheese. Reduce to low heat add salt & pepper. Simmer until cheese is melted
