I found this recipe in a really good cookbook I recently got.

In a plastic bag put 3 cups of flower and a teaspoon of each of the following: salt, black pepper, mustard powder, onion powder, garlic powder and paprika. Mix around and then place the chicken in the bag, seal it and toss until chicken is coated. Put on a nonstick cookie sheet and drizzle with olive oil. Bake at 450 degree until the outer coating is browned and the juices run clear when prodding with a fork.

You can serve this with almost anything. My husband loved it! And it was just so easy and nice and moist. Enjoy!

An easy way is to put them in a casserole dish and pour Bar-b-q- sauce on them, pineapple chicken sauce (Chinese) or any good bottled sauce. You will always have moist chicken. About an hour at 325 should do it for 4 quarters.

You can marinate them with italian dressing and garlic salt. Cover for the first 45 minutes then take the tin foil off to brown for about 5 minutes. They are really good like that.

cook low and slow, for example 325 for 45 min. to one hour.

bread it and preheat the pan your using, put a little butter in it to melt while you prepare the chicken. bake at 350 for about 45 minutes to an hour. if you want it to be really juicy, cover it with foil, and then pop it under the broiler to crisp the breading.

Campbell's? Cheesy Chicken & Rice Casserole

From: Campbell's Kitchen
Prep: 5 minutes
Bake: 50 minutes
Stand: 10 minutes

Serves: 6

Ingredients:

1 can (10 3/4 ounces) Campbell's? Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
1/2 tsp. onion powder
1/4 tsp. ground black pepper
2 cups frozen mixed vegetables
4 skinless, boneless chicken breasts halves
1/2 cup shredded Cheddar cheese


Directions:

Stir the soup, water, rice, onion powder, black pepper and vegetables in an 11 x 8-inch (2-quart) shallow baking dish.

Top with the chicken. Season the chicken as desired. Cover.

Bake at 375°F. for 50 minutes or until the chicken is cooked through and the rice is tender. Top with cheese. Let casserole stand for 10 minutes. Stir rice before serving.

Try It Alfredo: Use 1/4 cup grated Parmesan for Cheddar cheese. Add 2 tablespoons Parmesan cheese with soup. Use broccoli flowerets for vegetables. Top chicken with remaining Parmesan cheese.

Trim It Down: Use Campbell's? 98% Fat Free Cream of Chicken Soup instead of regular soup and use low fat cheese instead of regular cheese.

Mexican: In place of onion powder and pepper use 1 teaspoon chili powder. Substitute Mexican cheese blend for Cheddar.

Italian: In place of onion powder and pepper use 1 teaspoon Italian seasoning, crushed. Substitute 1/3 cup shredded Parmesan for Cheddar.

you can spray olive oil on them or wet them thoroughly before you cook them!

Shake and Bake. Works every time.

put some water around them and some bojen cubes with them.

Your only as limited as your imagination....and what you have on hand,,,
lay in a shallow baking dish if you just want plain baked chicken baste with butter or margarine s&p to taste.put in the oven at 450 then turn down to 350and bake 1 hour.

If you have a can of creamed soups such as chicken,mushroom or celery....prepare as can suggests and pour over chicken. this goes good with pastas or rice or mix equal part honey and your favorite BBQ sauce.and baste on chicken.this goes good with fried potatoes.

If you want to cut down of fat and e numbers
pull the skin of the chicken..this is easy if you grab it with a paper kitchen towel
Arrange chicken in casserole dish and add flat leaf parsley, oregano salt and black pepper to taste
Chop two big tomatoes into small pieces, chop a large onion and a clove of garlic (if u like it), then chop red and green sweet peppers into tiny pieces and add to casserole dish. Sprinkle on a bit of olive oil, add some stock or water and cook for about an hour and a half on a low light. when cooked you can garnish with black olives and parsley if you like.

You will enjoy this!! It goes well with a long grain or noodles :-)

I have always used lemon juice to keep them from drying out. Before baking, put lemon juice on your hands, or in a bowl and soak all sections (I usually just put some in my hand and rub the chicken with it. And I usually just use like paprika for seasoning.
