Beef Steak Gyros

1 pound beef shoulder top blade (flat iron) steaks
1 teaspoon dried oregano leaves, crushed
1 teaspoon minced garlic
Salt and pepper
4 pita breads, cut crosswise in half, warmed
Tomato and sweet onion slices

Yogurt Sauce:
1 cup plain lowfat yogurt
1/4 cup diced cucumber
1 large glove garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
Combine yogurt sauce ingredients in small bowl; cover and refrigerate.
Combine oregano and garlic; press evenly onto beef steaks. Heat large nonstick skillet over medium heat until hot. Place steaks in skillet; cook 13 to 15 minutes for medium rare to medium doneness, turning twice.
Carve steaks into thin slices; season with salt and pepper, as desired. Serve beef in pita pockets with tomatoes, onion and yogurt sauce.
Makes 4 servings.

Beef Gyros
Prep/Total Time: 30 min.

Ingredients:
1 cup ranch salad dressing
1/2 cup chopped seeded peeled cucumber
1 pound boneless beef sirloin steak, cut into thin strips
2 tablespoons olive oil
5 whole gyro-style pitas (6 inches)
1 medium tomato, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 small onion, thinly sliced
1 carton (4 ounces) crumbled feta cheese
2-1/2 cups shredded lettuce
Directions:
In a small bowl, combine the salad dressing and cucumber; set aside. In a large skillet, brown beef in oil over medium heat.
Layer half of each pita with the steak, tomato, olives, onion, feta cheese, lettuce and dressing mixture. Bring edges of each pita over filling and secure with a toothpick. Yield: 5 servings.

GYRO BURGERS

1/4 c. crumbled Feta cheese
3 tbsp. fine dry bread crumbs
1/4 tsp. dried oregano, crushed
1/8 tsp. garlic powder
1/8 tsp. pepper
1 lb. ground lamb or beef
2 lg. pita bread rounds, halved
1/4 c. dairy sour cream
1 c. shredded lettuce
1 sm. tomato, chopped
1/4 c. chopped cucumber
1/4 c. sliced pitted ripe olives

Combine Feta cheese, bread crumbs, oregano, garlic powder, pepper. Add meat and mix well. Shape meat mixture into four 1/2 inch thick oval-shaped patties. Place in 10x6x2 inch baking dish. Cover with waxed paper and microwave (about 8 minutes) until done.
Spread inside of pita halves with sour cream. Sprinkle some of the lettuce, tomato and cucumber into each pita half. Place 1 patty in each pita half. Sprinkle with olives. Makes 4 servings.

GYROS MEAT LOAF

2 1/2 lbs. ground lamb
1 (8 oz.) can tomato sauce
1 c. minced onion
1 c. chopped green pepper
1/2 c. fine dry bread crumbs
2 eggs
1/4 c. fresh chopped mint leaves
2 tsp. black pepper
2 tsp. dried oregano
2 tsp. dried basil
1 1/2 tsp. salt
2 cloves garlic, minced

Put everything into large bowl and massage the meat with bare hands for 5 minutes. Then put meat into an oiled loaf pan. Bake uncovered in 350 degree oven for 90 minutes. Let cool and pour off liquid. Serve in pita bread or in sandwiches. Season with cayenne pepper, sour cream, tomato, etc.

Tzaziki Sauce for Gyros
Kosher Salt & Coarse Pepper
2 cups plain (or Greek) yogurt
1 medium cucumber, unpeeled and seeded
1/2 cup sour cream
1T champagne/white wine vinegar
2 T freshly squeezed lemon juice (1 lemon)
1 T olive oil
2 cloves garlic, minced
1 T fresh dill
