I make a cheesecake with ricotta cheese(it's like cottage cheese), cream cheese, and sour cream, all three. I have been told by many that it is the best ever. I would call it a New York style cheesecake.All the ingredients along with eggs, sugar, flour, vanilla, all go into the food processor to make it very creamy.
CheeseCake is simply that. CHEESE. typically it is done with Cream CHeese, but many MANY recipes have sour cream in them normally those are cream cakes though. Stick with just cream cheese and then add your toppings and everything. That makes for the best cheese cake!!!

Cream cheese only...no sour cream or cottage cheese.
Cottage cheese would just make for a lumpy texture and sour cream would really thin it out.
