y ou could mix it to much and that would make it to fluffy and it would taste weird, just cook it a little longer
Not much to fix it. Just start over.
Also, the cake could fail to rise adequately, or even fall while in the oven. In that case, just cut it into cubes and layer it in a pretty glass bowl with fresh berries and whipped cream. Nobody will know the difference. If alcohol is permissable, sprinkle each layer with a bit of your favorite liqueur.
