Can someone tell me how to make fried squash?!
SERVES 4
This is quick, easy and very good. The flour/cornmeal mixture is very light but results in a slightly crisp texture.
INGREDIENTS
1-1/2 cup all-purpose flour
1-1/2 cups cornmeal
2 pounds zucchini and/or yellow squash, cut into about 1/2-inch slices
1-1/2 quarts canola or other cooking oil
Salt and pepper to taste
Freshly grated Parmesan cheese (optional garnish)
In a large bowl, mix together the flour and cornmeal. Add the squash slices and toss to coat. Heat the oil over medium-high heat in a large, deep pan, being certain the pan is large enough to hold the oil without it spilling over when the squash is added. The oil should be hot, but not smoking. Add about half of the squash and fry, stirring constantly, until tender and lightly browned, adjusting heat as needed. Remove with a slotted spoon or strainer and place on paper towels. Sprinkle immediately with salt, pepper and the optional cheese. Meanwhile, repeat the process with the remaining squash. Serve immediatley.

Easy. Get some squash and then fry it. Then you will have fried squash. Right?
This is a great recipe if you don't want it breaded
SOUTHERN FRIED SQUASH
8-9 squash, sliced but not peeled
8-10 slices bacon
1 tablespoon bacon grease
1 onion, sliced or chopped
1/4 cup sugar
salt and pepper to taste
Fry bacon. Remove all but about 1-2 tablespoons drippings. Fry squash and onions until heated through. Add sugar, salt and pepper. Add crumbled bacon pieces. Cover and steam until squash is tender. Remove cover and fry until dry and lightly browned.
Country Fried Yellow Squash

Ingredients
2-3 lbs yellow squash
2 tablespoons butter
1 teaspoon salt
1/2 cup water
1 tablespoon sugar
1/4 cup cream
2 tablespoons onions , diced
Directions
1Wash tender yellow squash and remove stem and blossom ends.
2Cut into 1/2-inch rounds.
3Place squash, butter, onions and salt into heavy skillet. Add water.
4Cover and cook on medium low heat until water is absorbed and squash is tender.
5Lightly mash with a fork.
6Add sugar and cream.
7Let it cook slowly until mixture is fairly dry and flavors develop, being careful not to let it scorch
