Ooh you could get a package of tortillas and some cheese, and a tub of gourmet salsa (not the jarred kind, look in the produce section for the good stuff)

Sprinkle cheese between 2 tortillas, bake in the oven at 350 for about 5 minutes, until the cheese gets melty.

Use a pizza cutter to cut them into triangles, arrange them on a platter, and put the salsa in a nice little bowl.

Voila! Quesadillas!

italian sausage fried and then mixed w cheesewiz - spread on those little rye squares of bread and baked til bread is crispy.
a veggie tray or fruit tray (even celery w pb and raisins - brings back memories and discussion for everyone)

a tray of Bruschetta....a french roll cut on the diagonal, toasted slightly then rubbed with fresh garlic, melted Goats Cheese, topped with...tomatoes, red onion diced, with chopped basil, and a squeeze of lemon....can't wrong..always a winner!

umm..crackers or bread with this awesome artichoke dip!!..or theres chips with guacamole..for guacamole, get some salsa, avacados, lemon juice, salt, pepper and garlic powder and a bit of mayo...just mash together adn add stuff to taste..tabasco sauce too....lemon bars work well as well..

1/2 cup mayonnaise
1/2 cup sour cream
1 cup grated Parmesan cheese
1 (14 ounce) can artichoke hearts, drained
1/2 cup minced red onion
1 tablespoon lemon juice
salt and pepper to taste

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a medium-sized mixing bowl, stir together mayonnaise, sour cream, Parmesan cheese and onion. When these ingredients are combined, mix in artichoke hearts, lemon juice, salt and pepper. Transfer mixture to a shallow baking dish.
Bake at 400 degrees F (200 degrees C) for 20 minutes, or until light brown on top.

2 (8 ounce) packages cream cheese, softened
1/2 cup butter
1 tablespoon instant Cheddar cheese sauce mix
2 cups shredded Cheddar cheese
2 tablespoons thinly sliced green onion
1 tablespoon lemon juice
1 teaspoon dried parsley
1/2 cup chopped walnuts to taste

DIRECTIONS
In a medium-sized mixing bowl, blend cream cheese and butter or margarine. Stir in cheese sprinkle, Cheddar cheese, green onion, lemon juice and parsley. Shape mixture into 2 large balls or logs, and roll them in the chopped walnuts. Refrigerate until ready to serve.

Artichoke & Spinach Dip
10 servings


INGREDIENTS
4 cloves garlic
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (14 ounce) can artichoke hearts, drained and chopped
1 (10 ounce) container Alfredo-style pasta sauce
1 cup shredded mozzarella cheese
1/3 cup grated Parmesan cheese
1/2 (8 ounce) package cream cheese, softened


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place garlic in a small baking dish. Bake in the preheated oven 20 to 30 minutes, until soft. Remove from heat. When cool enough to touch, squeeze softened garlic from skins.
In an 8x8 inch baking dish, spread the roasted garlic, spinach, artichoke hearts, Alfredo-style pasta sauce, mozzarella cheese, Parmesan cheese and cream cheese.
Cover and bake in the preheated oven 30 minutes, or until cheeses are melted and bubbly. Serve warm

Mini toasts with horseradish cream, thinly shaved roast beef and caramelized onion on top.

That's all I have for you- most of it can be prepared before hand. On the day all you have to do is deep fry the dumplings and the wonton sheets and keep them warm before serving.

depends on how formal. like you could have a seven layer dip (a fancy bean dip) and chips.
or make smoked beef pinwheels, buy a package of cresent roll dough (like pillsbury) unroll, but don't separate. spread with cream cheese, spinach or basil, and slices of smoked beef (real meat or veggie), and if you want sprinkle a little parmesan (optional). roll it back up and then slice. lay flat on baking sheet/stone and bake at 350.
brushetta made with tomatoes, garlic, olive oil, black olives, salt, basil. and serve with crusty french bread
or get hummus and pita bread or chips
cheese balls (they are like barr cheese rolled in usually sliced almonds) are only a few dollars and then get a party pack of fancy crackers (real cheap too)
veggie tray with carrots, celery, tomatoes, and dip
they also have that cocktail bread by the deli (it looks like a small but very long loaf of bread) and comes in pumpernickel and get spinach dip. or a variety of spreads like: egg salad, spinach, etc.

theres this one my mom makes, get some buddig corned beef, spred cream cheese down one side, place pickle spear inside, roll it up. cut in three's. GOOD SHYT!

As a change of taste, make bumps on a log. It's an old kids' favorite that still circulates well with grown-ups. Serve it with other, "normal" hors d'oeuvres as well.

If you aren't familiar with that name for them, it's celery with peanut butter and raisins. Wash a few stalks of celery and cut them into 2" lengths, leaving the center groove intact. Mix one part margarine or butter with three parts peanut butter to make it easier to spread. Fill the center groove of the celery with the pb (pipe it in with a pastry bag for a finer look) and dot with raisins. A tray of these on the table with other hot foods will doubtless be quite popular. I wouldn't make it your main fare, but it does make a nice addition to everything else. It's also quite inexpensive and assembles quickly.
