You need more than one fondue pot, because your vegetarians will not want to cook in the same oil as your carnivores.

Since you need extra pots, borrow them from some friends, four would be the perfect number: two for hot oil, one for cheese sauce (good on veggies and bread cubes), and one for melted chocolate (to dip in fruit and cake bites).

EDIT: Okay, after reading your edit, how about marinated tofu chunks (but dry them with paper towels after marinating), pre-cooked potato cubes (again, make sure they're dry) and chunks of onion (or whole pearl onions)? I'm not a vegetarian, but I'd be happy with all of those things.

Broccoli, cauliflower, onions, pieces of beef. You can also keep some salty snacks with dip sauces nearby and have stems of carrot and similar.
