I'm making meatloaf, homemade mac & cheese, and some green beans.

This is a great soup! I have used this recipe many times, and have passed it on to friends and family.

Taco Soup.....thanks to Paula Dean

2 pounds ground beef
2 cups diced onions
2 (15 1/2-ounce) cans pinto beans
1 (15 1/2-ounce) can pink kidney beans
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 1/2-ounce) can Mexican-style stewed tomatoes
1 (14 1/2-ounce) can diced tomatoes
1 (14 1/2-ounce) can tomatoes with chiles
2 (4 1/2-ounce) cans diced green chiles
1 (4.6-ounce) can black olives, drained and sliced, optional
1/2 cup green olives, sliced, optional
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package ranch salad dressing mix
Corn chips, for serving
Sour cream, for garnish
Grated cheese, for garnish
Chopped green onions, for garnish
Pickled jalapenos, for garnish

Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

How about a casserole

http://allrecipes.com/Recipe/Leftover-Ca...

try boneless chicken breast in a garlic cream sauce with roasted red peppers over whited rice with steamed green beans (whole).........

put some cut up chicken breasts in olive oil and worchester sauce and let it simmer in frying pan, boil some fried rice and mix in mushrooms and onions when chicken is nearly ready you can whip up some curry sauce if you want to put over it all easy done in about 20-25 minutes

Yum I had this last night... one of my staples.

Spicy Chicken
Serves 4

1kg chicken pieces, eg. thighs and drumsticks
1 onion, peeled and sliced
1 clove garlic, peeled and sliced
2 tbsp each chicken seasoning, cumin and coriander
1 tbsp paprika
1 red chilli, deseeded and chopped
Juice of one lemon
2 tbsp soy sauce
8 sprigs thyme, and more to garnish
2 tbsp sunflower oil
2 tbsp muscovado or granulated sugar
500gm potatoes, cut into 5cm pieces
2 carrots, cut into 3cm pieces
600ml hot chicken stock

Pierce each chicken piece in several places. Place in a sealable container and sprinkle with all the ingredients up to and including the thyme (I used dried thyme which worked perfectly well). Shake or stir thoroughly until well combined and the chicken is well coated. Leave in fridge for half an hour or overnight.

Heat the oil and sugar in a heavy-based casserole (a big heavy pot did the job!) over medium heat, stirring, until the sugar is dark golden brown. Add the chicken immediately, reserving the onion and marinade, and brown for 5 minutes, turning as needed.

Add the onion, marinade and veggies, and cook stirring for 10 minutes. Add the chicken stock and stir thoroughly. Cover and simmer for 25 minutes, stirring occasionally. Remove lid and cook for a further 10 minutes to allow the gravy to reduce a little.

Serve garnished with sprigs of thyme.

Notes: the carrots weren’t in the original recipe, but were very good – any root vegetables eg. parsnip or celeriac would do well in this I think. Worth adding extra veg – the flavour is fantastic, and good to balance out the meat/veg proportions. This is a very heavy winter dish, but very easy, and nice for a treat.

And this is sooooooo easy...

Fruity Winter Grilled Pork Chops
Serves 2
Prep time 10 Min
Cook time 15 Min
Ready in 45 Min

Ingredients
1 tablespoon brown sugar
3 tablespoons orange juice
2 tablespoons apple sauce
1 tablespoon soy sauce
2 cloves garlic, finely minced
? teaspoon fresh minced ginger
2 boneless pork chops
Few sprays low-fat cooking oil

Directions
Combine brown sugar, orange juice, apple sauce, soy sauce, ginger, garlic salt, and pepper.
Score pork chops on both sides with a sharp knife.
Pour marinade over pork chops in an airtight plastic container; shake around to coat thoroughly.
Marinade for at least 20 minutes at room temperature, turning and shaking a few times to ensure thorough coating.
Preheat an outdoor or oven grill for high heat.
Spray grill rack lightly with oil before placing chops on heat. Brush again with marinade, and spray once with low-fat oil if desired.
Grill under/over high heat for 12 to 15 minutes, turning and basting with marinade once.
While chops are cooking, heat remaining marinade over high heat, stirring so it doesn’t burn.
Serve chops with remaining sauce.

Try serving with mashed potatoes and green beans.
