potato flakes in place of the bread crumbs

Ingredients

One pound ground beef or turkey
1 cup potato flakes
1/2 cup grated cheese
1 tsp Italian herb mix
1/2 tsp ground black pepper
1/2 tsp salt
garlic to taste
optional- 1/2 cup minced onion

Directions
Mix thoroughly together all ingredients
roll into balls about 1 1/2 inches thick or size to preference
in non stick pan saute on high to brown
lower heat to low, cover, let cook through

You mean a gluten allergy? My local health food store sells many gluten-free products, including crackers and bread from which you can make your own crumbs. Do you have a health food store nearby?

If not, all you need is a binder. Can you eat oats? Put them in a coffee grinder or a food processor and grind them up a bit. They'll work just fine.

Otherwise, use Parmesan cheese. It's a wonderful binder and adds great flavor.

You can use rice (Uncle Ben's is gluten-free)

Porcupine Meatballs

1 1/2 pound lean ground beef
2/3 cup long-grain rice, uncooked
1/2 cup water
1/4 cup finely chopped onion
1 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 large can (15 ounces) tomato sauce
1 cup water
2 teaspoons Worcestershire sauce

Mix ground beef with rice, 1/2 cup of water, chopped onion, seasoned salt, garlic powder, and pepper. Shape porcupine ground beef mixture by tablespoon into 1 1/2-inch balls. Place the porcupine meatballs in an ungreased 2-quart shallow baking dish. Mix the remaining ingredients and pour over the porcupine meatballs. Cover and bake at 350°oven for about 45 minutes. Uncover and bake porcupine meatballs 15 to 20 minutes longer.

Gluten Free Dinner Recipes
Ingredients: Metric Units
1 1/2 lb. extra-lean ground beef
3/4 c. gluten free cereal (crushed) or gluten free bread crumbs
2 eggs
2 Tbsp. chili sauce
1 Tbsp. instant minced onion
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. gluten free curry powder

What would a buffet table be without a chafing dish of meatballs?

Note: Substitute ground turkey for the ground beef if you're avoiding red meat.


And be sure to take any rings off before combining the ingredients with your hands.

Serve with No Wheat Swedish Meatball Dipping Sauce.

In a large bowl, combine all ingredients.

Use nonstick spray to prepare a large electric skillet or conventional skillet. You'll place the formed meatballs directly into the skillet.

Preheat oven to 350°F.

Form the meat mixture into 1 in. (2.5cm) balls and place into the prepared skillet. Brown on all sides.

When browned, transfer meatballs to a 9x13 rectangular baking pan. Bake at 350°F for 25 min.

Make them a day ahead and warm them in a chafing dish for your buffet table. To serve them in true-blue Swedish fashion, don't have them swimming in gravy, just have a bit to dip in – try No Wheat Swedish Meatball Dipping Sauce. And maybe a dollop of lingonberry jam? Yum!

Substitute quick oats for the bread crumbs. and use a few tablespoons of grated parm from the green can. It's a great binder!

Rice doesn't work as well.
