1 stick whipped butter
1 1/2 cups flour
1 cup packed brown sugar
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg, beaten
1/2 cup milk

Combine butter, flour, sugar, baking powder, cinnamon, and salt and mix until crumbly. Reserve 1/2 cup for topping. To the remaining mixture, add the combined eggs and milk. Mix well. Pour into a greased and floured 8-inch square pan. Sprinkle with the reserved crumbs. Bake in a moderate oven, 375 F, 30 to 35 minutes.

1/3 cup butter or margarine

1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup buttermilk or sour milk*
1 egg, beaten
1/3 cup chopped nuts (optional)

Directions
1. Preheat oven to 375F. Grease an 8x8x2-inch baking pan; set aside. In a medium bowl stir together flour and brown sugar. Using a pastry blender, cut in butter until mixture resembles fine crumbs. Reserve 1/2 cup of the crumb mixture to sprinkle over batter. Stir baking powder, baking soda, cinnamon, and nutmeg into remaining crumb mixture. In a small bowl combine buttermilk and egg; add to crumb mixture, stirring just until moistened.

2. Spoon batter evenly into prepared baking pan. If desired, stir nuts into reserved crumb mixture; sprinkle over batter. Bake in the preheated oven about 25 minutes or until a wooden toothpick inserted near center comes out clean. Cool slightly. Serve warm. Makes 9 servings.

3. *Note: To make 1/2 cup sour milk, place 1-1/2 teaspoons lemon juice or vinegar in a glass measuring cup. Add enough milk to make 1/2 cup total liquid; stir. Let mixture stand for 5 minutes before using.

4. Variations: Next time try folding one of the following into the batter: 1/4 cup dried cherries and 1/4 cup semisweet baking pieces; 1/2 cup raisins, dried cherries, or other chopped dried fruit; 1/4 cup shredded coconut and 1/4 cup chopped macadamia nuts; 1/2 cup toffee pieces; 1/4 cup chopped peanuts and 1/4 cup miniature semisweet chocolate pieces; 1 cup fresh blueberries, raspberries, or coarsely chopped strawberries.

Ingredients
1 recipe Pecan Streusel (see recipe below)
4 eggs
6 tablespoons butter, softened
1-1/2 cups chopped pecans
2-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter, softened
1 8-ounce package cream cheese, softened
1-1/2 cups sugar
2 teaspoons vanilla

Directions
1. Prepare Pecan Streusel. Preheat oven to 325 degree F. Let eggs stand at room temperature for 30 minutes. Generously butter the inside of a 10-inch tube pan or 10-inch fluted tube pan using as much of the 6 tablespoons butter as possible. Coat the inside of the pan with the pecans, pressing the nuts into the butter as necessary; set aside.

2. In a medium bowl combine the flour, baking powder, and salt; set aside.

3. In a large mixing bowl beat the 3/4 cup butter and cream cheese with an electric mixer on medium to high speed for 30 seconds. Add the sugar and vanilla and beat 4 to 5 minutes until light and fluffy.

4. Add eggs, one at a time, beating for 10 to 20 seconds after each addition and scraping bowl down well. Beat in flour mixture, one-third at a time, until just combined.

5. Spoon one-third to one-half of the batter into the prepared pan, spreading evenly. Sprinkle with half of the Pecan Streusel, spreading evenly. Spoon the remaining batter over the Pecan Streusel, spreading evenly. Sprinkle evenly with remaining Streusel.

6. Bake in preheated oven for 65 to 70 minutes or until cake pulls away from sides of pan and top springs back when lightly touched and/or a wooden toothpick inserted near the center comes out clean.

7. Cool in pan on a wire rack for 15 to 20 minutes. Remove from pan. Turn upright and cool completely on rack. Makes 12 servings.

Pecan Streusel: In a small bowl combine 1/2 cup chopped pecans, 1/4 cup sugar, 1 tablespoon unsweetened cocoa powder, and 1-1/2 teaspoons ground cinnamon.

Butter Swirl Loaf Coffee Cake
1/2 cup melted butter, cooled
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup sugar
3/4 cup milk

Sift flour, baking powder and salt. Beat eggs until light. Add sugar and 1/4 cup of the butter. Add dry ingredients alternately with milk, beginning and ending with flour. Turn into greased 9x5x3 loaf pan. Combine 1/3 cup sugar and 2 teaspoons cinnamon. Sprinkle on batter. Pour on remaining butter. Cut through to marble. Bake at 375 Degrees F. for 40-45 minutes.

American Coffee Cake

4 1/2 c Flour
4 ts Baking powder
1 ts Salt
4 tb Sugar
2 tb Butter; or lard - rounded
2 Eggs
1 1/3 c Milk
Topping---------------------

1 ts Cinnamon
1 tb Butter
1/2 c Flour
1/2 c Sugar

Instructions:
Sift flour, add baking powder, salt, sugar. Sift three times. Chop
butter in with spoon. Beat up whites until stiff. Add egg yolks, beat.
Add milk. Beat all together, turn into 2 square pans and spread with
the topping mixture
