Usually its the brisket cut of beef although round or silverside are often used. The beef is pickled in a coarse salt rub (the grains were once called corns...hence the name). In the shops, raw pickled beef is sold for cooking already corned. The cooking process is boiling in enough water to cover it for usually two to three hours.
The simplest method of making it is to boil the beef in a large saucepan with the following ingredients:
1) 2 Tablespoons Vinegar (malt vinegar works well).
2) 1.5 Tablespoons of Brown Sugar.
3) 1 Teaspoon of Peppercorns
4) 1 Bayleaf
5) 1 Small Onion (whole)
6) 2 Cloves
7) 2 Small Carrots
These days most people buy the raw pickled beef and then cook it as above but to actually corn a piece of beef yourself by curing it in the spiced brine mixture lised as follows:
1) 1 to 1.5 cups of a coarse non-iodized salt per 10lbs of meat.
2) 3 Tablespoons Brown Sugar
3) 1 Heaped Tablespoon of Peppercorns
4) 2 Teaspoons of Allspice Berries (not ground allspice! Crack the berries however)
5) 5 Sprigs Fresh Thyme
6) 1 Teaspoon Powdered Sage
7) 1 Teaspoon Paprika
8) 7-8 Bay Leaves (Roughly Broken)
9) 1 Small Coarsely Chopped Onion
10) 1 Small Coarsely Chopped Rutabaga (aka Swede)
11) 1 Chopped Carrot
12) 6 Cloves of Garlic (Crushed)
Mix together the ingedients in a bowl and then rub over the meat. Place meat with the entire ingredients into a zip-lock bag and extract as much air as possible and place in the fridge.
The meat must cure in this brine mixture for a minimum of two weeks although for much longer is acceptable. Frequently turn the bag and ensure it remains sealed, doesn't leak and that the meat is soaking in the mixture.
When the curing is done, remove the meat and rinse it. Soak it for 24 Hours in fresh water (changing several times) to extract the excess salts. Do this soaking in the fridge for safety reasons.
Cook as instructed above to have your home made corned beef entirely of your own making!

Beef Brisket , I have corned a beef brisket. Different dry spices,pepper corns and a bunch of ( you can look it up.Put in a very large zipper lok bag (Some company makes them) Put in the fridge inside a large pan put a brick on top, turn twice a day for 5 to 7 days. OK now it is Corned !! Different ways to cook it My recipe came from Julia Childs and the cooks illustrated magazine and I pressure cooked it. I know you only asked what it was made from!!!!
