Answers: I would truly appreciate a good, tried, and tested chapli kabab recipe. This would be my first attempt at kabab making and I wanted my family to love it. Thanks in advance :)

Great question! I love "chapli kabab" too!
Chapli kabab is actually a dish from Afghanistan and the North-West Frontier Province of Pakistan.
It is very popular in the Afghan capital, Kabul, and in many Pakistani cities.
It is one of the national dishes, it is made from minced beef or lamb and is lightly spiced and cooked on a large flat griddle with animal fat.
Heres my favorite recipe-
Ingredients
? Kg. finely minced beef
1 medium sized onion chopped
2 eggs
? tsp. salt (according to taste)
1 tsp ginger (Adrak) paste
1 tsp crushed cumin seeds (Zeera)
1 tbs. crushed Whole dried red chilies
1 tsp crushed coriander (Dhaniya) seeds
1 tsp anardana
2-3 green chilies chopped
? cup of fresh coriander (Dhaniya) leaves
1 large tomato
1 tsp lemon juice or vinegar
100 grm. Makai ka Aata (Corn meal)
1 small onion sliced and fried till brown
Oil for shallow frying.
(DO NOT USE CORN FLOUR)
Instructions
Make small pieces of an omelet made with 2 eggs with a
little salt and Black Peppercorn. (Kali Mirch)
Chop the tomatoes finely.
Add all the ingredients to the mince meat and leave to marinate in the refrigerator for 2-3 hours.
Mix the omelet pieces and then make into flat patties and fry in a little oil. Wait to turn until brown on one side.
Makes about 6 kebabs.
Serve with naan.

1 tbs crushed whole dried red chilies
1 tsp crushed dhuniya seeds

1 tsp anardana
2-3 green chilies chopped
1/2 cup of fresh dhuniya leaves
1 large tomato
1 tsp lemon juice or vinegar
200 gms Makai ka atta (Corn meal)
(DO NOT USE CORNFLOUR)
1 small onion sliced and fried till brown
Add all the ingredients to the mince meat and leave to marinate in the refrigerator for 2-3 hours.
Then make into flat pattis and fry in a little oil.
Makes about 6 kababs.
this recipe has not been tested internationally but goes well for a family function when the emphasis is on taste.............i am sure yr family will devour it..............only use the best of lamb or beef...the best of cuts and clean fine meat.......oh la la i feel hungry.............thinking of it.
* Meat, half kilo with low fat content ..
* Two bulbs of fresh ginger, very fine cut.
* One bulbs onion average size- finely sliced.
* Coriander green leaves finely sliced .
* 4 Tomatoes crushed and fine cut.
Bitter Grape powder - two spoons
* Red and green chili two of each finely sliced
* Garlic one medium size bulb cut to fine pieces.
1. Mix all above ingredients in wide container and add
one table spoon Corn flour and two table spoons of wheat flour.
Add salt and water as needed to make a semi solid ball. Cover it with the lid and refrigerate for 4 to six hours before cooking.
2. Start the fire or the gas grill half an hour before cooking.
Cover the surface for cooking with a double layer of Aluminum foil perforated at intervals.
Prepare medium size balls and smear both surface of the balls with a touch of olive oil to prevent sticking and burning. Move the balls frequently and turn over when cooked.
Slow cooking range for the fire is advised, well cooked or well done is best for every taste.
serve with veggies and a nice barley drink or hot tea.
