Need a recipe please?!


Question: I can't find my recipe for applesauce cake that has been in my husband's family for ages. I feel like I let them down. Does anyone have a good recipe for applesauce cake. The one that comes closest to the recipe I remember, will get best answer. I promised my husband I would make it, now can't find it. I need your help. Thank you

APPLESAUCE CAKE

2 c. all-purpose flour
2 tsp. baking soda
1 tsp. baking powder
1 1/2 teaspoons cinnamon
1 tsp. freshly grated nutmeg
1/4 tsp. ground cloves
1 c. raisins
1 c. chopped walnuts
1 stick butter
1 large egg
1 c. sugar
2 tsp. vanilla
2 c. applesauce
1 tbsp. confectioners' sugar (for topping)

Preheat oven to 350°F.
Stir together the flour, soda, baking powder, and spices.

In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and then slowly add a portion of the dry ingredients, then a little of the applesauce, and continue alternating wet and dry ingredients, beginning and ending with dry ingredients. Add the raisins, walnuts, and vanilla at the end.

Turn into a greased and floured pan, and bake 35 to 40 minutes or until cake tests done. To test for doneness inserted toothpick into the center of the cake -- it should remain clean when removed.

Cool the cake in the pan. Dust with confectioners sugar after removing from pan, when cake is cool

1/2 cup unsalted butter, room temperature
2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups applesauce
1/2 cup raisins
1 cup chopped walnuts
Powdered sugar, optional

Preheat oven to 350 degrees F.

In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.

In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

1 cup white sugar
1/2 cup shortening
1 1/2 cups applesauce
2 tablespoons molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon salt
1 cup raisins

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour tube pan.
In a medium bowl, sift together the flour, baking soda, cinnamon, cloves and salt. Set aside.
In a large bowl, cream the sugar and shortening until fluffy. Add applesauce and molasses and mix in.
Gradually add the flour mixture and beat well to moisten. Fold in the raisins.
Pour into a prepared fluted or straight sided tube pan. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until toothpick inserted into the middle of cake comes out clean. Cake will not rise to top of pan. Cool for 10 minutes and remove from pan and cool on wire rack.

Reviewed on Jun. 15, 2003 by BOISETRAVIS This recipe was quick and easy. I tried it out on my coworkers and they all have to have the recipe! I have made it 3 times in one week and it is quickly becoming famous. I do recommend using 1/4 teaspoon cloves instead of 1 teaspoon. Also, I didn't need to cook as long as the recipe said. This recipe also works great witht he KitchenAide stand mixer.
