Beef Wellington side dish?!
Answers: I am fixing beef wellington for my wife tomorrow and I need a few sugestions on a good side dish to serve with it. I plan on haveing a sharaz with the meal but I will take alternative wine suggestions as well.
Oven roasted baby potatoes is a good accompanying dish. Simply quarter red potatoes (if you cant get baby you can use larger potatoes just cut them into one eight wedges). Coat with olive oil and sprinkle with fresh rosemary. Place wedges cut side up (skin side down) on a sheet pan and roast until golden brown - time will be dictated by the size of the wedges. When done dust with salt and pepper to taste.
I always believe that wine is a personal choice but I like a good Pinot Noir with my beef.

I would do a salad and scalloped potatoes, or maybe garlic mashed potatoes.
Id probably just steam some baby vegetables, then drizzle with honey, olive oil, chopped herbs and mustard mixed together.
I love Beef Wellington. I add shitake mushrooms to the liver pate. Make your side dish simple. I would suggest wild rice and perhaps glazed carrots.
Shiraz is a good wine. Consider a Pinot Noir or Cabernet as well. Enjoy!
Dauphinoise potatoes or mash with baby corn and mangetout.
Carrot batons, baby sweet corn, and baby trimmed beans with creamy mash would be choice of veg. I'd make a good gravy too.
They give you colour, good textures and compliment the beef wellington.
I'd have a good Merlot with mine. Happy to bring a bottle.

Steamed asparagus with Holindaise sauce. AND....either salad, rice pilaf, or new potatoes cut into quarters seasoned with olive oil and diff herbs. Put in baking dish in oven dalop with butter, keep turning over til done. SOOOOO good. If your interested I can give you complete recipe for it.

Beef Wellington is so very rich and special. It should be the star of the show! Don't serve anything else with it that's heavy. Try fresh steamed asparagus or broccoli spears with a simple butter and lemon juice drizzle. For dessert, how about fresh mixed berries in a champagne glass, topped with fresh whipped cream spiked with Cointreau and topped off with shaved dark chocolate curls? Finish the meal with espresso and a kiss...
